Bean and Sausage Soup

Soup! Oh, how I love a delicious, warm, comforting bowl of SOUP. This is a bean soup recipe I adore. Well actually, this is a bean and sausage soup. Who doesn’t love the combination of beans and sausage? This recipe is easy to put together. I use a package of 15 bean soup, ditching the seasoning packet. If you want you can always put together a combination of beans that you like. I just don’t make beans from scratch often enough for that to make sense.  Another thing I love about this soup is that it uses lean smoke...

Honey Lime Chicken Enchiladas

Are you looking for something completely delicious to add in to your dinner rotation?  Well, let me introduce you to my new Fav!!! Nothing too expensive or exotic that you have to run all over town hunting for.  A few simple ingredients that come together in a really delicious way. This is the first salad that I ever made that had my kids licking their plates and asking for seconds.  Yes, you heard me correctly, they asked for seconds of salad.  Now, that made me one happy mommy!  Veggies in my kids bellies….that they liked….that they requested!?!  Serious, WOW...

Easy Tropical Flank Steak

When I serve Flank Steak for dinner, everyone is happy.  I mean everyone.  It’s honestly uncanny- magical or something! As you can imagine, I’m always on the look out for new flank steak recipes!  Here’s one from my sister, Christine.  It’s absolutely delicious and the marinade is a snap to make.  I also like that it doesn’t have any oil in it. This recipe comes out best when it’s marinaded overnight.   Not to worry, though, even if you marinade it the morning you end up grilling it, it’s still  mighty delicious! Serves 4-6...
