Chocoflan Recipe

Opposites do attract, and in epic dessert fashion! Discover the charm of Chocoflan – a masterful union of fudgy chocolate cake and creamy vanilla custard. That little machine that makes chocolate and vanilla swirled ice cream might just be my favorite invention (second to air conditioning, of course). Why spend precious time at the counter pondering the age-old question of “chocolate or vanilla” when you can have both? “Both” (or “one of everything”) is,  after all, my dining philosophy, and it’s one of the reasons I love to make this Chocoflan. In one unassuming Bundt pan, you’ll construct the...

Chicken Lombardy

Bye bye boring chicken breasts! This Chicken Lombardy recipe makes a marvelous, memorable meal with just a few ingredients and a bit of Marsala magic.   What do Italy and Wisconsin have in common? If you said, “nothing,” you wouldn’t be completely wrong. Aside from a love of curdled milk products, there’s not much, but, as it turns out, they both claim a connection to a tantalizing take on the ubiquitous chicken breast: Chicken Lombardy. It’s a delicious and impressive main course that’s doable even on a weeknight. Pan-fried chicken breasts, layered with butter-basted mushrooms and cheese, get baked with a Marsala-infused sauce. The flavors make it taste like this dish is much more trouble than it actually is, and that’s my favorite kind of recipe! The origins of the Chicken Lombardy recipe aren’t definitive, but one story says it was created in Wisconsin as an homage to the late Green Bay Packers’ head coach Vince Lombardi. The recipe was published in a local cookbook there and eventually by Better Homes and Gardens. Another possibility is Chicken Lombardy hails from Italy’s Lombard region, known for its meat-heavy and butter-based recipes rather than traditional ingredients like tomatoes and olive oil. Perhaps it was a combination of the two, a concoction by some devoted cheese head inspired by an Italian vacation. Regardless, it’s an elegant dish with complex flavors that will...

Try my Lemon Pepper Chicken – it’s light and crispy, with a peppery, creamy lemon sauce that transforms your table into an elegant French dining room in less than 30 minutes.  Do you remember the first time you tasted fresh cracked peppercorns? The complex floral and fruity qualities can be a pleasant surprise if you’re used to a shaker of dust-like, ancient pepper that’s been passed down from table to table for generations of futile attempts at seasoning. Peppercorns were actually used as currency in the middle ages, and there are...
