Ingredient: Unsalted Butter

Chicken Lombardy

Bye bye boring chicken breasts! This Chicken Lombardy recipe makes a marvelous, memorable meal with just a few ingredients and a bit of Marsala magic.   What do Italy and Wisconsin have in common? If you said, “nothing,” you wouldn’t be completely wrong. Aside from a love of curdled milk products, there’s not much, but, as it turns out, they both claim a connection to a tantalizing take on the ubiquitous chicken breast: Chicken Lombardy. It’s a delicious and impressive main course that’s doable even on a weeknight. Pan-fried chicken breasts, layered with butter-basted mushrooms and cheese, get baked with a Marsala-infused sauce. The flavors make it taste like this dish is much more trouble than it actually is, and that’s my favorite kind of recipe! The origins of the Chicken Lombardy recipe aren’t definitive, but one story says it was created in Wisconsin as an homage to the late Green Bay Packers’ head coach Vince Lombardi. The recipe was published in a local cookbook there and eventually by Better Homes and Gardens. Another possibility is Chicken Lombardy hails from Italy’s Lombard region, known for its meat-heavy and butter-based recipes rather than traditional ingredients like tomatoes and olive oil. Perhaps it was a combination of the two, a concoction by some devoted cheese head inspired by an Italian vacation. Regardless, it’s an elegant dish with complex flavors that will...

Easy Brownie Brittle

If you like the thin, crispy, top crust from a pan of classic brownies or the crispy corners, then this Easy Brownie Brittle is just the recipe for you! There are few things in life as satisfying as a pan of fresh baked brownies. Everyone has their own personal idea of the perfect brownie, but whether you like them dense and gooey or thick and cakey, it’s hard to turn down a good brownie. And unlike a lot of other desserts, there are actually some really great boxed mixes out there for brownies. Of course, sometimes you’re in the mood to spend an hour or two in the kitchen baking up something from scratch. But then there are times when you’ve just gotta have chocolate, like, right now. And boxed brownie mixes are perfect for those days. All you have to do is add an egg or two, maybe some oil or water, pour it in a pan, and pop it in the oven. The hardest part of making brownies from a mix is waiting for them to cool so you can eat them! Brownies are kind of like pizza—even if it’s not the best, hand-tossed, artisan pizza you’ve ever had, it’s almost always good. And then, as if brownies themselves weren’t already tempting enough, someone went and dreamed up the delicious concoction that is brownie brittle. If you’ve...

Peppercorns were actually used as currency in the middle ages, and there...

Alton Brown Shepherd’s Pie

Shepherd’s pie is an incredible comfort food. Delicious, super flavorful meaty filling topped with a mound of rich, buttery mashed potatoes! I spend a lot of time in my kitchen experimenting with food and researching techniques and ingredients to find just the right combination of flavors for a share-worthy dish. Usually that process involves making my own tasty revisions to an existing recipe. A simple tweak or two might do the trick, or the changes might be significant. Sometimes, though, I find recipes that really hit the mark as-is, where it’s clear the person who developed the recipe took...
