Ingredients

Seasoning Mix:

  • 2 Dried Bay Leaves
  • 3/4 Teaspoon Dried Oregano
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon White Pepper
  • 1/2 Teaspoon Sweet Paprika
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Dried Thyme Leaves
  • 1/2 Teaspoon Dried Basil

Sauce:

  • 4 Tablespoon Unsalted Butter
  • 1 Cup Tomatoes Peeled and Chopped
  • 3/4 Cup Onion Chopped
  • 3/4 Cup Green Bell Pepper
  • 3/4 Cup Celery Chopped
  • 1 1/2 Teaspoon Garlic Minced
  • 1 1/2 Cup Chicken Stock
  • 1 Cup Tomato Sauce
  • 1 Teaspoon Sugar
  • 1/2 Teaspoon Tabasco Sauce

Instructions

  • Combine all ingredient for seasoning mix in a small bowl. Set aside.
  • In a large skillet, melt the butter over medium heat. Add tomatoes, onion, celery, bell pepper, garlic and seasoning mix. Cook until the vegetables are soft, about 8-10 minutes, stirring occasionally.
  • Add stock, tomato sauce, sugar and Tabasco and bring to a boil. Reduce heat to maintain a simmer and cook 20 minutes, stirring occasionally. Remove bay leaves before serving.
