Ingredients

  • 1 cup unsalted butter softened
  • 1 1/2 cups powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • red and green food coloring
  • Wilton holly melody sprinkles
  • 1 box Wilton royal icing bow transfers
  • 1 tube white cookie icing

Instructions

  • In the bowl of a stand-up mixer, add butter, powder sugar, egg, and vanilla and mix on medium speed until the mixture is fluffy.
  • In a separate medium mixing bowl, whisk together flour, baking soda, and cream of tartar.
  • Add flour mixture gradually to butter mixture with the mixer on low until combined. Turn dough out onto the lightly floured surface and cut into 4 equal pieces.
  • Return one piece of dough to the mixer and add 1/4 teaspoon of green food coloring (or more as desired) and mix until color is even. Repeat with the second piece of dough and red food coloring.
  • Place a sheet of parchment on the counter and lightly sprinkle with flour. Place the red dough on parchment then cover with another sheet of parchment and roll dough into a rectangle 1 inch thick. Using a sharp knife or pizza cutter, trim the edges of the rectangle to clean edges. Repeat with plain dough. Carefully place the plain dough on top of the red dough. Using the parchment paper below to help, row the stacked dough into a log. Cut the log in half and roll on half into a smaller log for ears. Wrap cookie logs in plastic wrap and refrigerate overnight.
  • Repeat the above steps with green dough and second plain dough.
  • Preheat oven to 350 degrees. Using a sharp knife, cut the logs into 1/4 inch thick slices. Place a big circle and two small circles onto the cookie sheet in the shape of Mickey's head. Bake in preheated oven 8-10 minutes or until slightly golden brown.
  • Divide cookies into which you want to be Mickey's and which you want to be Minnies.
  • Using the cookie icing, add a small dollop on the back of the icing bow and place in the of the big circle between the ears. Repeat with all Minnie cookies.
  • Using the cookie icing, pipe on a small dot onto the back of the holly sprinkles and place it into the top right corner of all the cookies. Allow all added decorations to dry 20 minutes before enjoying it.
