Ingredients
Cookies:
1/2CupUnsalted ButterSoftened at Room Temperature
1/2CupSugar
1/2CupLight Brown SugarPacked
1/2CupNutella
1EggLarge
1/2TeaspoonFrangelico or Vanilla Extract
1 1/2CupsAll-Purpose Flour
1TeaspoonBaking Soda
1/4TeaspoonSalt
1/2CupSemi-sweet Chocolate Chips
Filling:
1CupUnsalted ButterSoftened at Room Temperature
1CupNutella
1CupPowdered Sugar
1/2TeaspoonFrangelico or Vanilla Extract
Instructions
Make Cookies:
Preheat oven to 350 degrees.
Cream butter and both sugars with an electric mixer, on high speed, about 3 minutes until light and fluffy, scraping down the sides of the bowl as needed.
With the mixer on low, add the egg and vanilla. Add the Nutella and mix well.
In a small bowl whisk together the flour, baking soda, and salt. Add dry ingredients to wet ingredients, and mix on low speed until incorporated. Increase the speed to medium and mix just until the dough is smooth. Fold in chocolate chips.
Using a small ice cream scoop form the dough into balls and place on greased cookie sheet.
Bake 8-10 minutes. Let cookies cool about 5 minutes then transfer to a rack to cool completely.
Make Cream Filling:
In a large bowl mix all filling ingredients with an electric mixer, on high speed, about 3 minutes until light and fluffy.
Assembly:
Spread about 1-2 tablespoons of filling on the flat side of one cookie. Top with another cookie, flat side on filling.
