Ingredients

Egg Rolls:

  • 2 tablespoons vegetable oil
  • 1 pound pork ground
  • 1/4 cup green onions thinly sliced, white part only
  • 1/4 cup carrot shredded
  • 1 tablespoon fresh ginger grated
  • 4 cloves garlic minced
  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 cup cabbage shredded
  • 1 tablespoons sesame oil
  • 20 egg roll wrappers
  • oil to spray egg rolls before cooking

Sauce:

  • 1/3 cup soy sauce
  • 1/3 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • pinch red pepper flakes

Instructions

Filling:

  • Add 1 tablespoon of vegetable oil to a large skillet or wok over medium-high heat. Cook pork until no longer pink and cooked through. Break the meat into small pieces as you cook with the back of your spoon.
  • Place cooked pork on a plate and set aside.
  • Add the remaining tablespoon of vegetable oil to the pan and return to medium heat.
  • Add green onions and carrots, and cook until they begin to soften -- about 2 minutes.
  • Stir in the garlic and ginger and cook until fragrant -- about 2 more minutes.
  • Add chicken broth, soy sauce, sugar, and cabbage. Stir to combine. Bring contents of the pan to a boil, then reduce to a simmer for 5 minutes, or until the veggies have softened to your liking.
  • Remove pan from heat and stir in the sesame oil and pork.

Cooking + Assembly:

  • Grab a bowl of water and set it at the top of your rolling station.
  • Lay an egg roll wraper down on a clean surface, with a point facing you.
  • Add 2 tablespoons of filling to the center of each roll.
  • Fold the corner closest to you over the filling, then dip your fingers in the bowl of water and brush the corner of the wrapper that's folded over the meat.
  • Fold the side pieces in toward the center.
  • Tightly roll toward the open corner. Brush the tip of that corner with water before closing the egg roll.
  • Continue until you've used all the filling and wrappers.
  • Spray the egg rolls with cooking spray and lay them on the provided tray of the air fryer in a single, non-touching layer.
  • Air fry at 400 F for 8 minutes.
  • Serve with the sauce, and enjoy!
