Crack Potatoes

Crack potatoes are the easiest, most delicious potato dish to come around in a long time. 6 ingredients, 10 minutes of prep, and no peeling!

Ingredients

  • 16 ounces sour cream
  • 1 can (10.5 ounces) low sodium cream of chicken soup
  • 1 cup cooked bacon bits
  • 1 (1-ounce) package dry ranch dressing mix
  • 2 cups shredded Cheddar cheese, divided
  • 1 (32-ounce) package frozen hash brown potatoes, thawed

Instructions

  • Preheat the oven to 350°F. Spray a 9X13 inch baking dish with nonstick cooking spray; set aside.
  • In a large mixing bowl, stir together sour cream (16 ounces), cream of chicken soup, bacon bits (1 cup), ranch mix (1-ounce package), and 1 cup of cheddar cheese until well combined.

  • Stir in hash browns (32 ounces).

  • Spread in the prepared baking pan; cover with aluminum foil.

  • Bake in the preheated oven for 45 minutes. Remove foil; sprinkle remaining Cheddar cheese over potatoes. Bake until cheese is melted and lightly browned around the edges, about 15 minutes.

Notes

  1. Do I Need To Thaw The Potatoes: No! Just pull the bag from the freezer and proceed with the recipe.
  2. Bacon Bits: Bacon bits have come a long way from the days of those weirdly artificial tasting “imitation bacon bits”. I like to grab a bag of the prepared “real bacon bits” to make this easy recipe even easier!
