In a large bowl, add the cake mix (1 box), eggs (2), vegetable oil (1/3 cup), and vanilla (1 teaspoon). Stir until well incorporated.
Chill the dough for 20 minutes.
Meanwhile, preheat the oven to 350°F and line a baking sheet with parchment paper and set aside.
When the dough is done chilling, scoop the dough into 1- to 1 ½-inch balls and place them on the prepared baking sheet.
Bake for 8-10 minutes in the preheated oven. Do not overbake.
Let the cookies cool completely before the next step (important).
Melt the almond bark (12 ounces) in a large bowl in the microwave at 30-second intervals until it is smooth and creamy.
Dip half of a cooled cookie into the melted almond bark. Immediately add the sprinkles of your choice. *Handle the cookies with care as they tend to be delicate*.
Let the almond bark set naturally or pop the cookies into the refrigerator to set faster.
Enjoy with your favorite glass of milk.
Notes
Be Gentle! Cake mix cookies tend to be very delicate. Make sure they are completely cooled before attempting to dip them in the chocolate. Handle with care!
Cookie Scoop: Use a small cookie scoop, generously filled, to shape the cookie dough.
Spacing dough: These cookies will spread as they bake so be sure to space each cookie dough ball a minimum of 2 inches apart on the cookie sheet.
Cookie Color: If you want to color the cookies red and blue, divide the dough and use gel food coloring to do so. Add a bit at a time to get the exact shade you're looking for.
