Cucumber Tomato Feta Salad
Refreshing and colorful, I make this cucumber tomato feta salad for a light lunch and an easy side dish. It's a great summer salad with tons of fresh flavor.

Dressing Ingredients 2 tablespoons lemon juice 2 tablespoons olive oil 2 garlic cloves minced 1/4 teaspoon pepper 1/4 teaspoon salt 2 tablespoons fresh dill chopped Salad Ingredients 2 cups English cucumber chopped 20 ounces Grape or cherry tomatoes chopped 1 cup small purple onion chopped 6 ounces feta crumbled
Make the dressing: Place all the ingredients into a small bowl. Stir together and set aside.
Add the salad ingredients to a salad bowl.
Before serving, drizzle the dressing over the salad and toss to combine.
