Coconut Rice Loaded with Goodies!

This isn't your average Coconut Rice. First the rice is cooked in coconut milk then it's loaded with shredded coconut, fresh cilantro and chopped peanuts.

  • 1-14 Ounce Coconut Milk Canned
  • 1 Cup Water
  • 1 Cup Jasmine Rice
  • 1 Teaspoon Salt
  • 1 Teaspoon Sugar
  • 1/2 Cup Roasted Peanuts Chopped
  • 1/2 Cup Cilantro Leaves Roughly Chopped
  • 1/2 Cup Shredded Coconut Roasted


  • In a medium pan bring the coconut milk and water to a boil.
  •  Add the rice, salt and sugar, reduce the heat and simmer until all the liquid is absorbed.
  •  Stir in peanuts, cilantro, and coconut and serve immediately.
