Ingredients

  • 1 cup unsalted butter 2 sticks
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, firmly packed
  • 2 large eggs, lightly beaten
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup bread flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 10 ounces semisweet chocolate chunks
  • 10 cup dark chocolate chunks

Instructions

  • In the bowl of a stand mixer fitted with the paddle attachment, add the butter and both sugars and cream together on medium speed for 5 minutes, or until light and fluffy. Add eggs and vanilla and mix on medium speed for 2-3 minutes or until well combined.
  • In another mixing bowl whisk together all-purpose flour, bread flour, baking soda, and salt. Add both chocolate chunks and mix to combine.
  • Turn the mixer on low speed and gradually add the flour mixture to the butter mixture mixing just until combined and evenly incorporated. Scoop the dough into a resealable 1-gallon bag and refrigerate overnight.
  • Position a rack to the center of the oven. Preheat oven to 350 degrees. Line baking sheets with parchment.
  • Using a large cookie scoop, form dough balls, then place on prepared baking sheets, 2 1/2 inches apart. Flatten balls slightly with the bottom of a glass.
  • Bake in the preheated oven, 15-18 minutes, or until the edges are golden brown and the center is soft. The center may still appear underbaked. Do not overbake. Cool cookies on cookie sheet for 5 minutes then remove to a wire baking rack to cool completely.

Notes

Store in an airtight for up to 3 days or freeze for up to 1 month.
