Ingredients

  • 1 tablespoon olive oil
  • 1 pound 80/20 ground beef
  • 1 ounce package dry onion soup mix
  • 4 cups low sodium beef broth
  • 1 (28 ounce) can diced tomatoes, with their juice
  • 1 (12 ounce) frozen mixed vegetables
  • 1 cup dried elbow macaroni

Topping:

  • Parmesan cheese

Instructions

  • Heat olive oil (1 tablespoon) in a large pot. Add ground beef (1 pound) and cook, crumbling with a spoon, until beef is cooked through and there is no longer any pink. Remove and discard any excess fat. Sprinkle onion soup (1 (1-ounce)package) over beef and stir.
