1cupsalted buttermelted and cooled slightly *see note
1 3/4cupsbrown sugar,firmly packed
1/4cupgranulated sugar
2large eggs,at room temperature
2teaspoonsvanilla extract
2 1/2cupsall-purpose flour
1teaspoonbaking powder
1/4teaspoonsalt
1 1/2cupsbutterscotch chipsreserve ¼ cup for dotting the top
Preheat the oven to 350ºF (177ºC) and line a 9x13 baking dish with parchment paper.
In a large mixing bowl, mix together with a wooden spoon the melted butter (1 cup), brown sugar (1 3/4 cups), and sugar (1/4 cup) until combined. Add the eggs (2) and vanilla (2 teaspoons) and mix until well combined. Add the flour (2 1/2 cups), and sprinkle the baking powder (1 teaspoon) and salt (1/4 teaspoon) over the top of the flour, not in one big blob. Mix until just combined. Add 1 1/4 cup butterscotch chips and mix until just combined one last time.
Pour and press the batter into the prepared baking dish and dot the top with the remaining chips. Bake for 30-35 minutes. Do not overbake. You want the edges to be deep golden brown and the center to look just set.
Remove from the oven and let the baking dish cool on a wire cooling rack until almost completely cooled.
Cut into squares and serve.
Serve with a scoop of vanilla ice cream and a drizzle of butterscotch or caramel ice cream topping, if desired.
