Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup onion chopped
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1/2 teaspoon coriander
  • 1/2 teaspoon garlic powder
  • 1 pound ground turkey
  • 8 ounces tomato sauce
  • 1 1/2 teaspoons apple cider vinegar
  • 1 1/2 teaspoons brown sugar
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper

Serve With:

  • corn or flour tortillas softened
  • shredded cheese
  • sour cream
  • avocado
  • fresh cilantro chopped
  • lettuce

Instructions

  • Heat oil (2 tablespoons) in a 12-inch skillet, over medium-high heat, until it shimmers. Add onion (1 cup) and cook, stirring frequently, until it begins to brown, 3-5 minutes. Stir in chili powder (1 tablespoon), cumin (2 teaspoons), oregano (2 teaspoons), coriander (1/2 teaspoon), and garlic powder (1/2 teaspoon) and continue to cook, stirring often, until fragrant, about 30 seconds.
  • Add the turkey (1 pound) to the skillet and continue to cook, until its still slightly pink, about 2 minutes. 
  • Add the tomato sauce (8 ounces), vinegar (1 1/2 teaspoons), brown sugar (1 1/2 teaspoons), salt (2 teaspoons), and pepper (1/4 teaspoon) and cook until the sauce thickens about 4 minutes. Adjust seasonings. Add more salt and pepper as needed.
  • Serve with prepared tortillas and your favorite toppings.

Notes

  1. Build flavor from the start. Let the onions get a little color before adding the spices—this adds a subtle sweetness and depth you can’t get otherwise.
  2. Bloom the spices properly. Give them about 30 seconds in the hot oil until fragrant—this step makes a big difference in flavor.
  3. Don’t overcook the turkey. Pull it while it’s just slightly pink, then let it finish in the sauce so it stays tender.
  4. Taste and adjust at the end. Turkey needs enough salt and balance—add a pinch more salt or a splash of vinegar if it tastes flat.
  5. Keep it saucy, not dry. The mixture should be moist and lightly coated in sauce—add a splash of water if it gets too thick.
  6. Warm your tortillas the right way. Heat them in a dry skillet or directly over a flame for the best texture and flavor.
