Heat oil (2 tablespoons) in a 12-inch skillet, over medium-high heat, until it shimmers. Add onion (1 cup) and cook, stirring frequently, until it begins to brown, 3-5 minutes. Stir in chili powder (1 tablespoon), cumin (2 teaspoons), oregano (2 teaspoons), coriander (1/2 teaspoon), and garlic powder (1/2 teaspoon) and continue to cook, stirring often, until fragrant, about 30 seconds.
Add the turkey (1 pound) to the skillet and continue to cook, until its still slightly pink, about 2 minutes.
Add the tomato sauce (8 ounces), vinegar (1 1/2 teaspoons), brown sugar (1 1/2 teaspoons), salt (2 teaspoons), and pepper (1/4 teaspoon) and cook until the sauce thickens about 4 minutes. Adjust seasonings. Add more salt and pepper as needed.
