Zucchini Corn Fritters

Crispy on the outside and tender inside, these Zucchini Corn Fritters are packed with fresh zucchini, sweet corn, sharp cheddar, and savory seasonings. They're an easy, family-friendly side dish or appetizer that's perfect for summer dinners and cookouts.

Ingredients

  • 2 cups zucchini, shredded
  • 1 teaspoon table salt
  • 1 cup corn, fresh, canned, or thawed frozen
  • 2 large eggs
  • 1/2 cups all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • 1 garlic clove, minced
  • 1/4 cup green onions, chopped
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon cumin
  • 1/2 teaspoon seasoned salt

For Frying

  • 2-3 tablespoons vegetable oil

Instructions

  • Prep the zucchini. Place the shredded zucchini in a colander and sprinkle with 1 teaspoon salt. Let stand for 15–20 minutes. Press out as much moisture as possible, then wrap the zucchini in a clean kitchen towel and squeeze until very dry.
  • Mix the batter. Add the zucchini to a large bowl with the corn, eggs, flour, cheddar, garlic, green onions, seasoned salt, pepper, paprika, and cumin. Stir until evenly combined.
  • Cook the fritters. Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium heat. Drop heaping tablespoons of batter into the skillet, gently flattening each into a round with the back of a spoon. Cook for 3–4 minutes per side, or until golden brown and crisp. Transfer the cooked fritters to a baking sheet and keep warm in a 250°F oven while you cook the remaining batches, adding more oil to the skillet as needed.
  • Serve. Garnish with chopped parsley or sliced green onions, if desired. Serve warm with sour cream, ranch dressing, garlic aioli, or your favorite dipping sauce.

Notes

  • Use the coarse side of a box grater for the best texture.
  • Squeeze the zucchini very dry to prevent soggy fritters.
  • Keep the fritters small so they cook evenly and become crispy.
  • Fresh, canned, or thawed frozen corn all work well.
  • For thicker fritters, stir 1 teaspoon baking powder into the batter (optional).
