The BEST Coconut Rice. This isn’t your average coconut rice. First, the rice is cooked in coconut milk, then it’s loaded with shredded coconut, fresh cilantro, and chopped peanuts. So, So, So Delicious!!!
I love this rice dish so much I could make an entire meal of it. Coconut rice has always been a favorite of mine. Every time I find it on a restaurant’s menu, I have to order it.
This recipe started out as a simple, standard coconut rice. Then, I began adding and tweaking, and now, finally, I have super-yummy coconut rice that I love beyond belief. Every time I make this, I swear the whole family oohs and aahs and then devour the whole batch.

Before You Start
Rice: Long grain, Jasmine, or basmati all work well in this recipe. Jasmine rice is the most authentic rice used in making classic coconut rice recipes.
Coconut Milk: I use regular coconut milk, as opposed to low-fat, but you can use whichever you prefer. I like the added richness the full-fat version adds to the dish.
Shredded Coconut: I also use sweetened coconut, the same kind I use for baking. I toasted it on a cookie sheet in the oven until it got a nice golden brown and a little crispy.
Tips For The Best Coconut Rice Recipe
→Rinse It: For best results, when cooking rice, the first step, regardless of the type, is to rinse your rice. This step removes any debris, dust, and surface starch. Starch is what makes the rice clump and stick together. Rinsing makes your finished rice fluffier! I place the measured rice in a colander, set in the sink, and rinse it, turning with my hand as it rinses, until the water is clear.
Storing + Freezing + Make-Ahead
- How Long Can You Keep This In The Fridge? Leftovers will be kept in a sealed container in the fridge for up to four days. If they’re a little dry when you pull them out, add a sprinkle of water before you reheat them. Then just fluff with a fork and dig in!
- Can You Freeze This Rice? Yes! This is a great way to have flavorful rice on hand when you need it. Follow the recipe below, then just seal and freeze for up to 6 months. When ready to use, thaw in the fridge overnight, then reheat! You may need to add a little water before you heat it to rehydrate some of the grains.
- Make-Ahead Tips: This rice recipe keeps well, so if you need to prepare it ahead of time to have it on hand, feel free to do so. It tastes just as good the next day as it does fresh.

Coconut Rice Loaded with Goodies!
Ingredients
- 1-14 Ounce Coconut Milk Canned
- 1 Cup Water
- 1 Cup Jasmine Rice
- 1 Teaspoon Salt
- 1 Teaspoon Sugar
- 1/2 Cup Roasted Peanuts Chopped
- 1/2 Cup Cilantro Leaves Roughly Chopped
- 1/2 Cup Shredded Coconut Roasted
Instructions
- In a medium pan bring the coconut milk and water to a boil.
- Add the rice, salt and sugar, reduce the heat and simmer until all the liquid is absorbed.
- Stir in peanuts, cilantro, and coconut and serve immediately.

The smell of jasmine rice is so fragrant and wonderful. I enjoy it immensely when it's just plain. I know I would love this version.
