Avalanche bars are an easy, no-bake dessert made with crispy rice cereal, creamy peanut butter, white chocolate, and mini marshmallows — a loaded, upgraded version of classic Rice Krispie treats.
They’re soft, chewy, and packed with sweet, salty, and chocolatey flavor in every bite. Everything comes together quickly on the stovetop, then sets into thick, sliceable bars that are perfect for sharing.

Ingredients
- White Chocolate Chips
- Creamy Peanut Butter – I prefer creamy peanut butter, but you can use chunky peanut butter if you want. It adds a bit of extra crunch and texture.
- Rice Krispies
- Mini Marshmallows
- Mini Chocolate Chips

Tips
- Melting the white chocolate– Go low and slow in the microwave. You just want the chips to melt, and they should never get too hot to touch. White chocolate can burn quickly, so err on the side of caution with your power level and time if you’re using the microwave. You can also melt them in a double-boiler.
- Don’t press too hard- These avalanche rice krispie treats become super dense and hard if you compact them too much. When you’re spreading them into the pan, press down just enough to get and smooth top. I like to keep mine as thick as possible.

Storing + Freezing + Make-Ahead
- How Long Can You Keep This In The Fridge? In a well-sealed container, these avalanche krispie bars stay fresh for about 4-5 days. According to cookie food handling guidelines, if you froze them, they should hold for close to 6 months.
- Can You Freeze This? You could freeze this Avalanche Bars recipe, but I find they’re so quick to whip up that I usually don’t bother. If you do freeze them, be sure to allow them to completely defrost before serving them.
- Make-Ahead Tips: Since these bars hold really well, you can make these several days ahead of time. Otherwise, they only take a few minutes to whip up!

Recipe Variations
- Change it up – One of the most fun things about these rocky mountain avalanche bars is you can change up just about any ingredient. You could try a different type of cereal, or butterscotch chips instead of white chocolate. You throw mini M&M’s or peanut butter chips in the mix. The sky’s the limit! Just be mindful of the texture and taste combinations you’re creating.
How to Make Avalanche Bars

- Melt white chocolate chips in the microwave.
- Add the peanut butter to the melted white chocolate chips.
- Stir to combine.
- Add the Rice Krispies. Stir and let it cool.
- Add marshmallows and chocolate chips. Stir and combine.
- Transfer the mixture to the pan. Press lightly. Press remaining chocolate chips.
- Cut into squares.

Avalanche Bars
Ingredients
- 12 ounces white chocolate chips
- 1/4 cup creamy peanut butter
- 3 cups Rice Krispies
- 1 1/2 cups mini marshmallows
- 1/4 cup plus 2 tablespoons for garnish mini chocolate chips
Instructions
- Lightly grease a 9x9 pan (or 8x8 if you prefer thicker bars)
- In a microwave-safe bowl dump in white chips (12 ounces) and heat on medium power for 1 minute. Stir and continue in 30-second increments until chips are melted.

- Add the peanut butter (1/4 cup) to the melted chocolate and stir to combine.

- Add the Rice Krispies (3 cups).

- Let cool for approximately 15-20 minutes stirring every 5 minutes, or so, to help cool.
- Add the marshmallows (1 1/2 cups) and 1/4 cup mini chocolate chips and stir to combine.

- Dump the mixture into the prepared pan and spread evenly, pressing lightly with the back of a spoon, but do not compact too much, otherwise, they will get hard.
- Press the remaining 2 tablespoons of mini chocolate chips into the top for garnish.

- When the bars are completely cooled cut into squares. Enjoy!
