Our Nutella Sandwich Cookies are delicately soft, chewy, cookies sandwiched with an incredibly creamy Nutella buttercream filling!
I adore Nutella. Who doesn’t?! Well, I’ve heard there are a few people who actually don’t! Can you believe it? If you’re in the same camp as me, the love-love-love Nutella camp, then these cookies are for you. They are fabulous! Seriously!!! They’re a soft, chewy, cookie sandwich with an incredibly creamy Nutella buttercream filling. I mean, pass the cookie plate, STAT!!!
You can make the cookies smaller if you want to yield more cookies.
Nutella Sandwich Cookies with a Creamy Nutella Filling!
Ingredients
Cookies:
- 1/2 Cup Unsalted Butter Softened at Room Temperature
- 1/2 Cup Sugar
- 1/2 Cup Light Brown Sugar Packed
- 1/2 Cup Nutella
- 1 Egg Large
- 1/2 Teaspoon Frangelico or Vanilla Extract
- 1 1/2 Cups All-Purpose Flour
- 1 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1/2 Cup Semi-sweet Chocolate Chips
Filling:
- 1 Cup Unsalted Butter Softened at Room Temperature
- 1 Cup Nutella
- 1 Cup Powdered Sugar
- 1/2 Teaspoon Frangelico or Vanilla Extract
Instructions
Make Cookies:
- Preheat oven to 350 degrees.
- Cream butter and both sugars with an electric mixer, on high speed, about 3 minutes until light and fluffy, scraping down the sides of the bowl as needed.
- With the mixer on low, add the egg and vanilla. Add the Nutella and mix well.
- In a small bowl whisk together the flour, baking soda, and salt. Add dry ingredients to wet ingredients, and mix on low speed until incorporated. Increase the speed to medium and mix just until the dough is smooth. Fold in chocolate chips.
- Using a small ice cream scoop form the dough into balls and place on greased cookie sheet.
- Bake 8-10 minutes. Let cookies cool about 5 minutes then transfer to a rack to cool completely.
Make Cream Filling:
- In a large bowl mix all filling ingredients with an electric mixer, on high speed, about 3 minutes until light and fluffy.
Assembly:
- Spread about 1-2 tablespoons of filling on the flat side of one cookie. Top with another cookie, flat side on filling.
- Repeat with remaining cookies and filling

I followed the recipe but somehow got a dry dough and the cookies didnt look anything like the picture. Not giving up tho. Rolled remaining dough into a sausage and put in fridge. Gonna slice up and try again this evening. Hopefully better result this time 🙂
I’m not sure how you got those results! I just checked the recipe to make sure I didn’t make an error. It’s all just as I made it.
I finished the dough last night. Bit crunchier, but so yummy once i added the nutella cream on them 🙂 Will make again.

I just made these last night (and am pregnant so didn’t eat the batter) and got 13 cookies sandwiches. Next time I would probably make them smaller (use a flat TBS instead of a small cookie scoop) as I think they are pretty rich. I also had some frosting left over. Need to come up with some better ideas than eating it off the spoon 😉

Hey Katie! I’m really sorry but for the life of me I can’t remember! I’m trying to get better at posting the yield of a recipe. The problem with baked goods is unfortunately I often start tasting the dough and one thing leads to another and….Well i mess up the count! I promise I will exert more self control in the future.
