Ingredients
Salad:
6cupsspring mix lettuce
2(10-ounce) container grape tomatoescut in half
8hard boiled eggssliced
1(16-ounce) bag frozen petite green peasthawed
1small red onion
1(16-ounce) bag cauliflower rice
Dressing:
1 1/2cupsmayonnaise
1cupsour cream
2/3cupparmesan cheese
1tablespoonsugar
1teaspoon salt
1/4teaspoonpepper
Topping:
8ouncesbaconcooked and crumbled
4ouncessharp cheddar cheeseshredded
Instructions
In a large glass bowl, layer all the salad ingredients, in the order listed, one at a time in rows.
In a small mixing bowl, whisk together all the dressing ingredients until smooth. Spread the dressing over the top layer of salad, sealing the edges. Sprinkle the top with cheese and bacon. Cover and refrigerate for 6-8 hours. Toss and serve.
