2tablespoonsolive oil
8cupsbroccoli florets
salt
pepper
Instructions
Preheat oven to 425ºF (218ºC).
On a rimmed baking sheet (half sheet size works well), drizzle olive oil (2 tablespoons). Spread broccoli (8 cups) out on top of olive oil. With your hands turn broccoli a couple of times to coat with olive oil. Arrange broccoli in a single layer. Sprinkle generously with salt and pepper.
Roast broccoli in preheated oven for 20-25 minutes or until broccoli is cooked to desired tenderness and is caramelized on the side touching the pan.
