1Sweet Red PepperChopped
1Medium Russet PotatoDiced
215 Ounce Canned Tomato Sauce
1TablespoonDried Oregano
1/4TeaspoonSugar
2TeaspoonsSalt
1/2TeaspoonBlack Pepper
1Optional **Canned Chipotle in Adobo
1/2CupFresh CilantroChopped
Cooked Rice
Instructions
In a large saucepan add all ingredients. Bring to a simmer and continue to cook over medium-low heat until chicken is cooked through and potato is soft. Serve over cooked rice
**NOTE: I cut one pepper in half and use in this recipe. You can add more if you like the heat. Freeze the extras from the can in little snack ziplocs and store in the freezer.
