This creamy 3-ingredient sausage cream cheese dip comes together in just 15 minutes with sausage, cream cheese, and Rotel—perfect for parties, game day, and easy entertaining!

1 pound sausage 1 (10-ounce) can Rotel diced tomatoes and green chilies, undrained 12 ounces cream cheese
In a 12-inch skillet, over medium heat, brown and crumble sausage (1 pound) until there is no pink left. Drain and discard excess grease.
Stir in Rotel (1 can- including juice) and cream cheese (12 ounces) to the skillet.
Continue to cook over low heat until cream cheese is melted. Served while it's warm.
Use undrained Rotel. The juice from the tomatoes helps melt the cream cheese smoothly and gives the dip its perfect scoopable texture.
Choose your sausage wisely. Mild sausage keeps it family-friendly; hot sausage adds a spicy kick without any extra ingredients.
Soften the cream cheese if you can. Let it sit at room temp for 20–30 minutes to help it melt faster and creamier.
Plan to serve it warm. This dip is at its absolute best bubbling-hot — a small slow cooker on “Warm” is perfect for parties.
Need a thinner dip? A splash of milk stirred in at the end loosens it right up.
