Preheat oven to 350ºF (177ºC). Spray two 8X4 inch baking pans with nonstick cooking spray.
In a large bowl whisk together the first nine ingredients. In a separate bowl, mix eggs (3), oil (1 cup), and vanilla (1 tablespoon). Add the egg mixture to the flour mixture and combine. (The batter will be extremely thick). Mix in apples (2 cups) and 1 cup chopped pecans until evenly distributed through the batter.
Spoon batter evenly into prepared pans and smooth out the top of the batter with the back of a spoon. Bake in the preheated oven for 50-55 minutes or until a toothpick inserted into the center of the loaf comes out clean and the edges of the bread are just pulling away from the baking pan.
Make The Glaze:
In a heavy-bottomed 2-quart saucepan, bring brown sugar (1/2 cup), butter (1/4 cup), and milk (3 tablespoons) to a boil over medium heat. Boil for 1 minute, whisking constantly. Remove from heat.
Add vanilla (1 teaspoon) and powdered sugar (1 cup) and using a hand-held electric mixer beat on medium speed until smooth. Pour half the glaze immediately over each loaf of cooled bread and sprinkle evenly with pecans (1 cup).
Notes
Batter: This is a simple quick bread recipe that comes together in minutes. The batter will be thick.
Make It Sweeter: If you prefer a sweeter apple, use Pink Lady, Fuji or Honeycrisp apples. I prefer Granny Smith because they hold their shape, stay crisp and a little tart. The tartness is a surprise pop of flavor that I enjoy. Please feel free to use any apple variety that you like.
Glaze It! Once the glaze is made, spread it on the cooled loaves immediately. The glaze will begin to harden so once it is on the bread, have the pecans chopped and ready to sprinkle on top.
Butter: If you prefer, you can substitute butter for oil. However, the cake will be heavier.
Vegan Version: You can easily make this recipe free of animal products! Replace eggs with a vegan egg substitute in the batter, and for the glaze sub in coconut oil for butter and unsweetened vanilla almond milk instead of cow’s milk. Bam! Apple bread vegan friendly.
