1(6-ounce) packageSTOVE TOP Stuffing Mix for Chicken
2(10-ounce) packagesfrozen chopped broccoli,thawed and drained
Preheat oven to 350ºF (177ºC). Spray a 9X13-inch baking dish with nonstick cooking spray.
Prepare stuffing (1 package) according to package directions using the ingredients per the package (I didn't list them in the ingredient list above). Set aside.
In a large bowl, combine soup (2 cans), sour cream (1 1/2 cups), wine (1/2 cup), lemon juice (1 tablespoon), Worcestershire sauce (2 teaspoons), thyme (1/2 teaspoon), poultry seasoning (1 teaspoon), salt (1/4 teaspoon), and black pepper (1/2 teaspoon) and mix until combined. Gently mix in chicken (3 cups) and broccoli (2 packages) until all ingredients are evenly coated in the sauce. Pour mixture into prepared baking dish. Evenly top chicken mixture with prepared stuffing.
Bake uncovered in preheated oven for 25-30 minutes or until casserole is heated through and bubbly.
Notes
Drain the broccoli thoroughly. This is the most important step for preventing a watery casserole. After thawing, gently squeeze out any excess moisture with paper towels.
Use rotisserie chicken for the best flavor. The seasoning and tender texture add extra depth to the casserole while saving valuable prep time.
Don’t overbake. The chicken is already cooked, so you’re simply heating everything through. Overbaking can dry out the filling and stuffing topping.
Let it rest before serving. Allow the casserole to sit for 5-10 minutes after baking so the creamy filling can set up slightly and serve more neatly.
Customize the vegetables. Not a broccoli fan? Try frozen mixed vegetables, peas, green beans, or even sautéed mushrooms instead.
Make it extra cozy. For an even richer casserole, sprinkle 1 cup shredded cheddar cheese over the chicken mixture before adding the stuffing topping.
