Cook the bacon. In a large skillet, cook the chopped bacon over medium heat until crisp. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving the bacon drippings in the skillet.
Sauté the onion. Add the chopped onion to the bacon drippings and cook over medium-low heat until soft and translucent, about 6–8 minutes.
Cook the cabbage. Add the chopped cabbage to the skillet and toss well to coat it in the bacon drippings. Cook, stirring often, for 8–10 minutes, until the cabbage begins to soften.
Add the broth and seasonings. Stir in the chicken broth, salt, black pepper, Cajun seasoning, and sugar. Continue cooking, stirring occasionally, until the cabbage is tender but not mushy.
Add the bacon and serve. Stir the crisp bacon back into the cabbage until evenly combined. Taste and adjust the seasoning as needed, then serve hot.
Notes
Cabbage: Not all cabbagesare created equal! Make sure, for this recipe, that you get green cabbage, not red. Red is more akin to making sauerkraut and doesn’t fry up as nicely as green.
