Ingredients

  • 1 dozen hard-boiled eggs 12
  • 1 tablespoon dijon mustard
  • 1 teaspoon paprika
  • 1 1/2 teaspoons cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 cup mayonnaise
  • Green jimmy sprinkles
  • Orange food coloring
  • Black food coloring

Instructions

  • In a bowl of cold water, add 2-3 drops of black food coloring. Mix until incorporated.
  • Take the back of a spoon and gently tap all around each egg, creating little cracks.
  • Place each egg in the black water then place in the fridge for 2 hours.
  • After your eggs have chilled in the black water, remove the bowl from the fridge,
  • De-shell each egg then cut each egg in half lengthwise.
  • Remove the yolks from each egg half and place in a medium-sized bowl.
  • In the same bowl, add the mayonnaise, cajun seasoning, paprika, garlic powder, and dijon mustard. Mix until combined.
  • Add 2-3 drops of orange food coloring and mix until incorporated.
  • Transfer the egg mixture to a piping bag with a star tip.
  • Pipe a dollop into the center of each hard boiled egg half.
  • Add a green jimmy sprinkle to the top of the dollop and now you have a cute pumpkin!
  • Serve and enjoy!

Notes

  1. Perfect hard-boiled eggs: Start eggs in cold water, bring to a gentle boil, cover, and let sit 10–12 minutes before cooling.
  2. For party platters: Arrange them on a black or orange plate for extra festive flair.
  3. Want extra spice? Add a dash of hot sauce or cayenne to the yolk mixture.
  4. Hosting kids? Let them help with the “cracking” and decorating — it’s messy fun they’ll love.
