Grease a 9X13 inch baking dish with butter. Spray a piece (large enough to cover the baking dish) of aluminum foil with cooking spray. Place on counter sprayed side up; set aside.
Preheat oven to 400°F (204°C).
Spread the prepared mashed potatoes (6 cups) in an even layer in the buttered baking dish.
Sprinkle the heated corn (8 ounces) evenly over the mashed potatoes.
Sprinkle the heated chicken (26 ounces) in an even layer over the corn.
Evenly sprinkle the cheese (2 cups) over the chicken.
Cover the casserole dish with prepared foil and bake in preheated oven until the cheese has melted and the ingredients are heated through.
Remove from oven, pour gravy (1 jar) over top of the casserole, return to oven uncovered, and continue to bake another 7-10 minutes. Remove from oven, sprinkle with parsley if using, and serve!
Notes
Switch the Chicken: If you’re looking to make this a little healthier, skip the fried chicken options and use chunks of rotisserie chicken or leftover grilled chicken. I like to toss rotisserie in some gravy. If you’d like to make it this way, grab an extra jar of the gravy and add enough to lightly coat all the chicken.
Make Mine Shrimp: Sub the popcorn chicken with popcorn shrimp to mix things up a little.
Thanksgiving Bowl Version: Use your Thanksgiving leftovers to make a Thanksgiving bowl casserole. When I make this version, I add extra layers. I layer mashed potatoes, stuffing, green beans, turkey and top it off with lots of gravy. I generally skip the cheese when I make it this way.
Change Your Potatoes: To mix things up sometimes I use frozen cubed Southern potatoes or Potatoes O’Brien.
