McGriddle Bites

My McGriddle Bites tastes just like Sausage McGriddles. You can make them ahead of time, refrigerate them, freeze them, and pull them out any time!

Ingredients

  • 16 ounces breakfast sausage
  • 2 cups Hungry Jack pancake mix
  • 1 1/2 cups water
  • 1/4 cup, plus more for dipping maple syrup
  • 1 cup cheddar cheese, shredded

Instructions

  • Preheat oven to 400ºF (204ºC). Butter or spray a mini muffin tin with nonstick cooking spray; set aside.
  • In a 12-inch skillet, over medium-high heat, brown and crumble the sausage (16 ounces) until there's no longer any pink. Using a slotted spoon, transfer to a paper towel-lined plate.

  • In a large mixing bowl, stir together pancake mix (2 cups), water (1 1/2 cups), and maple syrup (1/4 cup) until just combined. Do not over-mix!

Notes

  1. When mixing these simple ingredients, do not overmix or the muffins will be tough. Mix just until the batter comes together.
