My McGriddle bites recipe tastes just like the Sausage McGriddles you can buy at that popular fast food chain. You can make them ahead of time, refrigerate them, freeze them, and pull them out any time you have a craving for pancakes, sausage, and cheese.
My McGriddle Bites are mini muffins that are mixed with cooked sausage, pancake batter, maple syrup and cheddar cheese. I promise you will find yourself popping these little gems in your mouth for a quick snack, a convenient breakfast, or on the go in your car!
I like to warm them up, top them with blueberries and drizzle a little more maple syrup on top.

MCGRIDDLE BITES INGREDIENTS
- Breakfast sausage: I use Jimmy Dean’s regular pork sausage. This delicious item will mimic that sausage patty in a Sausage McGriddle.
- Pancake Mix: I use Hungry Jack Pancake Mix, but any mix will do. Just make sure it is a “just add water” mix. For this recipe, Bisquick will not do.
- Water: Filtered or tap water.
- Maple syrup: Use the real stuff to get that authentic maple flavor. This natural sweetener is hard to substitute.
- Cheddar cheese: Sharp or mild, I use block cheese and grate it myself for best result. For convenience, you may use pre-shredded cheese. Just keep in mind that it will not melt as nicely since pre-shredded cheese contains cellulose to keep the cheese from sticking.
TIPS
When mixing these simple ingredients, do not overmix or the muffins will be tough. Mix just until the batter comes together.
STORING + FREEZING + MAKE-AHEAD
- How Long Can You Keep This in The Fridge? Once made, your McGriddle Bites will last up to five days in the fridge.
- Can You Freeze This? Store the cooled McGriddle muffins in a freezer bag, label, and freeze for up to three months. When ready to eat, fully thaw, toast and enjoy!
- Make-Ahead: These little gems can be made ahead of time. Just loosely cover until ready to serve and reheat in the toaster oven or microwave at half power for a minute.

These make great afternoon snacks or breakfast go-to bites! HOW TO MAKE McGRIDDLE BITES
- Brown and crumble the sausage.
- Transfer to a paper towel-lined plate.
- In a bowl, add together pancake mix, water, and maple syrup.
- Stir until well combined.
- Add cheddar cheese and sausage.
- Fold in.
- Spoon batter into prepared mini muffin tin.
- Bake.
- Serve.

McGriddle Bites
Ingredients
- 16 ounces breakfast sausage
- 2 cups Hungry Jack pancake mix
- 1 1/2 cups water
- 1/4 cup, plus more for dipping maple syrup
- 1 cup cheddar cheese, shredded
Instructions
- Preheat oven to 400ºF (204ºC). Butter or spray a mini muffin tin with nonstick cooking spray; set aside.
- In a 12-inch skillet, over medium-high heat, brown and crumble the sausage (16 ounces) until there's no longer any pink. Using a slotted spoon, transfer to a paper towel-lined plate.
- In a large mixing bowl, stir together pancake mix (2 cups), water (1 1/2 cups), and maple syrup (1/4 cup) until just combined. Do not over-mix!
- Add cheddar cheese (1 cup) and sausage then fold in.
- Spoon batter into prepared mini muffin tin. Bake in preheated oven until the muffins are golden brown and a toothpick inserted in the center comes out clean, about 12-15 minutes.
- Serve warm with extra syrup for dipping.

I love this recipe. I make it for early tailgates & work breakfast potlucks regularly & it’s always a hit. I tend to add a little more syrup than suggested just for extra pancake-y flavor, but that’s just preference!
I’ve also made them with beyond sausage & dairy free cheese to accommodate guests & they turn out equally as well. (Tip: buy the beyond breakfast patties, cook them, and ground them in food processor for similar texture!)

Can I use milk instead of water?
Hey Jennifer. Great question. It sounds like a great variation. I haven’t tested it so I’m not sure how it would come out.
I make a sauage cheese bisquick drop biscuit and we love. I love the McGriddle Bacon…I swap out the McDonald’s sauage for bacon. (Their sauage tears my stomach up). I would love to try your recipe though. Bisquick changed their recipe and I have not had to add veg. oil to pancake recipe, etc. Looking forward to next time making Sauage McGriddles.
