This delicious casserole is quick and easy to put together. Using commercially prepared canned biscuits speeds up the prep significantly and the homemade sausage gravy comes together in a snap. The total time it takes to get this on the table is just over 30 minutes so it’s great for weekday mornings or dinners.
My family loves this casserole when I serve it for breakfast and they’re just as happy when it’s on our dinner table. Yes, it’s that good! My kids absolutely go crazy for this.
The recipe is made in an 8×8 casserole dish. I suggest you double it and make it in a 9×13 because it goes quickly. If you happen to have leftovers, they’re great heated up in the microwave for lunch!

- Breakfast Sausage – Use your favorite brand in this biscuit casserole with gravy. If you use a brand that’s heavily seasoned with sage, omit or adjust the dried sage.
- Whole Milk- The gravy is best made with whole milk rather than low-fat. It creates a rich luscious gravy.
- Homestyle Biscuits – For convenience, and my hectic schedule, I typically use canned refrigerated buttermilk biscuits. Choose the large biscuits. Homemade biscuits are amazing to use when time permits! Pillsbury Grands biscuits are my favorites!
- Shredded Cheese – This recipe doesn’t contain any cheese. You might see some other recipes that include cheddar cheese. Listen, I’m crazy for cheese!! In this recipe, however, it is so rich and delicious, the cheese is not only unnecessary but detracts from the incredible flavor of this dish.
- Bake – Be sure to bake uncovered in an 8X8 baking dish.
Tips + Tricks
- Gravy Recipe: Sometimes the gravy can become too thick. Just thin it with milk, adding just a little at a time, until you achieve desired thickness.
Storing/Freezing Tips
- How Long Can You Keep This In The Fridge? The leftover sausage biscuits and gravy casserole can last in the fridge for 1-2 days.
- Can You Freeze This? But according to FDA, meat leftovers, gravy, and meat broth will last for 2-3 months. Thaw overnight in the refrigerator. Cover with foil and heat in a 350 degree oven until warmed through.
- Make-Ahead: You can make the gravy 24 hours ahead of time and store it in an airtight container in the fridge.
What To Serve With Biscuits and Gravy Breakfast Casserole
This recipe is great served alone but if you want to serve more with this sausage biscuits gravy casserole as a brunch, for instance, add simple green salad tossed with my homemade balsamic vinaigrette (takes 5 minutes to make and it’s better than any you can buy!). My strawberry spinach salad is absolutely delightful with this, as is, my broccoli salad with homemade orange dressing.
How To Make Easy Biscuit And Gravy Casserole

Cook sausage in a large skillet, crumbling with a spoon, over medium-high heat until cooked through.

Melt butter to skillet drippings.

Sprinkle half the flour over the sausage and let the sausage soak it up. Sprinkle the remaining flour over the sausage and cook, stirring constantly, for 2 minutes.

Gradually whisk in milk, sage, and black pepper. Simmer until gravy thickens.

Arrange half the biscuit pieces in the bottom of the prepared pan.

Pour gravy evenly over the biscuit layer.

Arrange remaining biscuits over gravy.

Bake uncovered, in preheated oven for 13-15 minutes, or until biscuits are fully cooked and golden. Let stand 3-5 minutes before serving.

- Preheat oven 350°F. Spray an 8X8 baking dish with nonstick cooking spray; set aside.
- Cook sausage (16 ounces), crumbling with a spoon, over medium-high heat until cooked through. Melt butter (2 tablespoons) to skillet drippings. Sprinkle half the flour over the sausage and let the sausage soak it up. Sprinkle the remaining flour over the sausage and cook, stirring constantly, for 2 minutes. Gradually stir in milk (2 1/2 cups), sage (1/4 teaspoon), and black pepper (1/4 teaspoon). Simmer until gravy thickens.
- Meanwhile, cut biscuits (8) into 4 pieces. Arrange half the biscuits in the bottom of the prepared pan. Pour gravy evenly over the biscuit layer. Arrange remaining biscuits over gravy.
- Bake uncovered, in preheated oven for 13-15 minutes, or until biscuits are fully cooked and golden. Let stand 3-5 minutes before serving.

I’m a Yankee, so this is the first time I have tried biscuits and gravy. Very nice change from eggs and pancakes. Those who like open-faced sandwiches will like the bottom layer of this casserole, and those who like golden-browned biscuits will like the top layer – and those who like both are getting a twofer! I did double the sage and pepper. But if you double this recipe, I don’t recommend doubling the biscuits – there seemed to be plenty if not too much. Remember there are 2 layers of it.
