In a medium bowl, cream peanut butter (1 cup) and butter (2 tablespoons) until just evenly combined. Add both sugars (3/4 cup powdered sugar + 3/4 cup brown sugar) and continue beating until combined (Don't overbeat). The consistency of the mixture should allow you to handle it and roll into small balls. If it's too sticky, add more powdered sugar until you reach a consistency that you can easily roll. Roll mixture into small balls, using about 1 teaspoon of filling, and set on the prepared baking sheet. Sandwich balls between two pretzels and place in the freezer for 30 minutes.
Melt the chocolate chips (1 1/2 cups) and shortening in a microwave-safe bowl in the microwave on low for 30-second intervals until smooth. Dip each pretzel sandwich halfway into melted chocolate and place on the baking sheet. Chill in the fridge until the chocolate is set.
Notes
Shape: These work with any shape pretzel that you can sandwich the filling between. I used the adorable Christmas pretzels above. These make some of the best holiday gifts for teaches, neighbors, and friends!
Filling: Shape the filling to roughly the same shape as the pretzel you are using before sandwiching.
Baking Sheet: I use a parchment lined quarter sheet pan to place the pretzel bite on for freezing. It's a much more manageable size for cramming into my freezer!
