These Peanut Butter Pretzel Bites Are Like Two Yummy No-Bake Treats In One Adorable Bite! A Creamy Buckeye And A Crispy Chocolate Covered Pretzel.
This little treat is always a hit when I serve it. It’s great for any holiday, perfect to give to friends in little bags, and anytime someone want a delicious little nibble. They’re like Reese’s peanut butter cups crossed with crunchy, salty pretzels…or should i simply say, the perfect flavor combo?
To make these even more irresistible, they’re really easy to make. You don’t even have to turn on your oven because these are no bake treats! Perfect when you want to make something with little ones, during the heat of the summer months, or holiday treats.
Peanut butter pretzel bites are similar to my classic Buckeye recipe, decadent Buckeye cookies, no-bake peanut butter bars (taste just like a Reeses peanut butter cup!), and dark chocolate peanut butter truffle brownies! Who can resist the combo of chocolate and peanut butter? I sure can’t!
Peanut Butter Pretzel Bites Ingredients
- Peanut Butter: I like Jif or Krogers Creamy peanut butter-no endorsement-just the brands I use.
- Butter: Use either salted or unsalted butter.
- Powdered Sugar: To prevent sugar lumps in your filling, sift first.
- Brown Sugar: You can use either light or dark.
- Mini Pretzels: Use any shape that will work well to contain the filling.
- Chocolate Chips: I used semi sweet. You can switch things up by changing the type of chips.
- Shortening: This makes the melted chocolate more manageable and smoother.
Tips
Shape: These work with any shape pretzel that you can sandwich the filling between. I used the adorable Christmas pretzels above. These make some of the best holiday gifts for teaches, neighbors, and friends!
Filling: Shape the filling to roughly the same shape as the pretzel you are using before sandwiching.
Baking Sheet: I use a parchment lined quarter sheet pan to place the pretzel bite on for freezing. It’s a much more manageable size for cramming into my freezer!
Storing + Freezing
- How Long Can You Keep This In The Fridge? These will last in the fridge for 1-2 weeks.
- Can You Freeze This? Yes. These will stay fresh for 3 months in the freezer. Just be sure to store in an airtight container.
How To Make Peanut Butter Pretzel Bites
-
In a medium bowl, cream peanut butter and butter until just evenly combined. Add both sugars and continue beating until combined (Don’t overbeat). The consistency of the mixture should allow you to handle it and roll into small balls. If it’s too sticky, add more powdered sugar until you reach a consistency that you can easily roll. Roll mixture into small balls, using about 1 teaspoon of filling, and set on the prepared baking sheet. Sandwich balls between two pretzels and place in the freezer for 30 minutes.
-
Melt the chocolate chips and shortening in a microwave-safe bowl in the microwave on low for 30-second intervals until smooth. Dip each pretzel sandwich halfway into melted chocolate and place on the baking sheet. Chill in the fridge until chocolate is set.
