Preheat oven to 325°F. Lightly grease a 9 x 13-inch baking dish.
Pat the pork steaks dry with paper towels.
In a small bowl, combine the salt, pepper, paprika, garlic powder, onion powder, thyme, and brown sugar.
Rub the pork steaks with olive oil, then coat all sides with the seasoning blend.
Spread the sliced onions across the bottom of the baking dish. Scatter the garlic over the onions.
Arrange the pork steaks on top of the onions.
Pour the chicken broth around the sides of the pan, being careful not to wash the seasoning off the pork.
Cover tightly with heavy-duty foil.
Bake for 2 hours.
Remove the foil and continue baking for 20-30 minutes, or until the pork is fork-tender and reaches an internal temperature of at least 195°F in the thickest portion.
Let rest for 10 minutes before serving.
Spoon the onions and pan juices over the pork before serving.
