Our Apple Brownies are fabulously thick, rich, and moist—then topped with a warm caramel glaze that’s decadently divine. Every bite has tender apple pieces, crunchy pecans, and that buttery brown sugar flavor that makes fall desserts so irresistible.
Why these brownies are so delicious: these apple brownies are a perfect blend of soft, chewy texture and caramel-apple flavor. The brown sugar base keeps them rich and moist, the chopped apples add bursts of tart sweetness, and the silky caramel glaze ties it all together with bakery-level decadence.

Grab your mixing bowl and let’s make these cozy caramel-topped brownies together.
Before You Begin
These Apple Brownies come together easily with pantry staples and a few fresh apples. Here are a few tips to make them perfect every time.
✨ Use a metal pan if you can. It conducts heat more evenly than glass, helping these dense blondies bake up with perfectly chewy edges.
✨ Cool completely before glazing. Pouring caramel glaze on warm bars will make it soak in rather than form that glossy layer on top.
✨ Chop the apples small. Finely chopped Granny Smith apples bake down just right, adding sweetness without excess moisture.
✨ Line the pan with foil. Leave a few inches of overhang on each end—this makes it easy to lift the bars out for clean slicing once cooled.
✨ Toast the pecans. A quick toast brings out their natural oils and adds a nutty aroma that complements the caramel beautifully.
Ingredients for Apple Brownies
🍎 This is just a quick glance at what you’ll need. For exact measurements and the full ingredient list, head down to the recipe card below.
Brownies:
- Brown Sugar: Gives the brownies that signature caramel flavor and dense, fudgy texture.
- Unsalted Butter: Adds richness—let it cool slightly before mixing so it doesn’t cook the eggs.
- Granny Smith Apples: Their tart flavor keeps these sweet bars perfectly balanced.
- Pecans: For crunch and buttery flavor in every bite.
Caramel Glaze:
- Brown Sugar + Butter: Melt together for that irresistible caramel base.
- Milk + Powdered Sugar: Create a smooth, pourable glaze that sets beautifully.
- Pecans: Sprinkled over the top for extra crunch and presentation.
Pro Tips
⭐ Cut cleanly: For neat slices, chill the bars briefly after glazing. The caramel will firm up, and your knife will glide right through.
⭐ Upgrade with sea salt: A sprinkle of flaky sea salt over the caramel glaze turns these into salted caramel apple brownies—absolutely divine!
⭐ Storage tip: These stay moist for days thanks to the apples and brown sugar—just cover tightly and keep at room temperature.
⭐ Perfect texture: The key is not to overbake. Pull them out when a toothpick comes out mostly clean; they’ll finish setting as they cool.
Storing + Reheating + Freezing + Make-Ahead Tips
Storing
- Store covered at room temperature for up to 3 days, or refrigerate for up to 5. The caramel glaze keeps the bars beautifully soft and moist.
Reheating
- If chilled, bring to room temperature before serving or warm individual pieces in the microwave for 10–15 seconds for that just-baked coziness.
Freezing
- Freeze sliced, unglazed brownies for up to 3 months. Thaw overnight in the fridge, then add the glaze once defrosted for the best texture and flavor.
Make-Ahead
- Bake the brownies a day ahead and glaze them the next day once completely cool. This actually enhances the flavor as the brown sugar and apples mingle overnight.
🍽️ What to Serve With
These Apple Brownies are wonderful with a simple glass of milk, coffee, or hot tea. If you’d like to serve a cozy fall spread, pair them with a fresh salad, warm bread, and a sweet finish.
- Fresh + Crisp Sides: harvest salad, house salad with red wine vinaigrette.
- Cozy Breads: cat head biscuits or Bisquick biscuits.
- Sweet Finishes: pear pie, sour cream apple pie, or honey bun cake.

Apple Brownies
Ingredients
Blondies:
- 2 cups Brown Sugar Firmly Packed
- 1 cup Unsalted Butter Melted and Cooled
- 2 Large Eggs Lightly Beaten
- 2 teaspoons Vanilla Extract
- 2 cups All Purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 2 Granny Smith Apples Peeled, Cored and Chopped
- 1 cup Pecans Chopped
Caramel Glaze:
- 1/2 cup Brown Sugar Firmly Packed
- 1/4 cup Unsalted Butter
- 3 tablespoons Milk
- 1 teaspoon Vanilla Extract
- 1 cup Powdered Sugar
- 1 cup Pecans Chopped
Instructions
- Preheat oven to 350ºF (177ºC).
- Line a 9x13 baking dish with doubled aluminum foil and a few inch overhang on both ends. Butter or spray lined the dish with nonstick cooking spray. (I prefer using a metal rather than glass dish for this but use whichever you like)
- In a large bowl, stir together brown sugar, melted butter, eggs, and vanilla.
- In a separate bowl, stir together flour, baking powder, and salt. Add to brown sugar mixture and stir until combined. Stir in apples and pecans. Pour batter into prepared baking dish.
- 5. Bake in preheated oven for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
- Meanwhile, prepare glaze. In a heavy bottomed 2-quart saucepan, bring brown sugar, butter, and milk to a boil over medium heat. Boil 1 minute, whisking constantly. Remove from heat.
- Add vanilla and powdered sugar and using a hand-held electric mixer beat on medium speed until smooth. Pout immediately over cooled blondies and sprinkle with pecans.
