✨ Before You Begin
✨ This is a rich, cheese-forward baked ziti:
Without meat, this recipe leans on ricotta, mozzarella, and marinara to create a creamy, satisfying texture that still feels hearty.
✨ Use a good marinara sauce:
Since the sauce is a major flavor component here, choose one you love—store-bought or homemade both work well.
✨ Cook pasta just under al dente:
The ziti will continue cooking in the oven, so slightly undercooking it at first keeps it from getting too soft.
✨ Let it rest before serving:
Give the baked ziti about 10 minutes to rest so it sets up and serves more cleanly.
Vegetarian Baked Ziti Ingredients + Key Notes
Ricotta Cheese: This is the creamy base of the dish. It adds richness and helps create that classic baked ziti texture.
Mozzarella Cheese: Provides that gooey, melty layer on top and throughout. I recommend shredding your own for the best melt.
Parmesan Cheese: Adds a salty, nutty depth that balances the richness of the other cheeses.
Egg: Helps bind the ricotta mixture so it sets properly when baked.
Marinara Sauce: This is a key flavor component, so use a high-quality jarred sauce or homemade if you have it.
Ziti Pasta: Ziti works best because it holds the sauce inside the tubes. Penne or rigatoni can be used if needed.
Fresh Basil: Adds brightness and freshness to balance the richness of the dish.
Italian Seasoning + Nutmeg: These give the dish its classic Italian-inspired flavor. Nutmeg adds a subtle warmth that enhances the cheese.
Salt + Black Pepper: Essential for bringing all the flavors together.
🥣 How to Make Vegetarian Baked Ziti
Prep the dish. Spread 1 cup of marinara sauce in the bottom of a prepared baking dish.
Cook the pasta. Boil the ziti in well-salted water just until just under al dente. Drain, then toss with the marinara sauce and Italian seasoning.
Mix the cheese filling. Stir together the ricotta, mozzarella, Parmesan, egg, basil, rosemary, nutmeg, salt, and pepper.
Layer the ziti. Spoon half the pasta into the baking dish, spread the ricotta mixture over the top, then finish with the remaining pasta.
Bake. Cover with foil and bake until hot and bubbly. Remove the foil, add the remaining cheese, and bake again until melted and lightly golden.
Rest and serve. Let it rest about 10 minutes before serving.
What to Serve With Vegetarian Baked Ziti
Fresh + Crisp Sides
A fresh salad is the perfect contrast to this rich, cheesy pasta. Try a House Salad for something simple, or a Mediterranean Salad for a brighter, more flavorful option.
Vegetable Sides
Adding a vegetable side helps balance the richness of the dish. Simple Roasted Peppers are a great match, or try Roasted Carrots and Parsnips for a slightly sweet, caramelized flavor.
Cozy Breads
Warm bread is always a good idea with baked ziti. Garlic Bread is a classic choice, or try Garlic and Herb Parker House Rolls for something a little more special.
Sweet Finishes
For dessert, keep it simple with either Italian Christmas Cookies for something light or Lemon Icebox Cake for a cool, creamy finish.
Storing, Make-Ahead, and Freezing
How to Store
Store leftover baked ziti in an airtight container in the refrigerator for up to 4 days. The flavors deepen over time, making leftovers especially good.
Make-Ahead Tips
Assemble the ziti up to the point of baking, cover tightly, and refrigerate for up to 24 hours. Let it sit at room temperature for 20–30 minutes before baking, then bake as directed.
Can You Freeze Baked Ziti?
Yes. For best results, assemble but do not bake. Wrap tightly and freeze for up to 3 months. Thaw overnight in the refrigerator, then bake as directed. You can also freeze baked leftovers, though the pasta may soften slightly when reheated.
Reheating Instructions
Cover loosely with foil and reheat in a 325°F oven until warmed through, about 20–25 minutes. For smaller portions, microwave in 30–60 second intervals, stirring occasionally. If it seems dry, add a splash of marinara or milk before reheating.
Frequently Asked Questions
◆ Can I use a different pasta shape?
Yes. Penne or rigatoni work well because they hold the sauce nicely.
◆ Can I make this without eggs?
You can omit the egg; the texture will be slightly softer but still delicious.
◆ What’s the difference between vegetarian and meatless baked ziti?
They’re often used interchangeably. In this recipe, it simply means no meat, with flavor coming from cheese, sauce, and seasonings.
◆ Why is my baked ziti watery?
Usually this happens because the sauce wasn’t simmered long enough or added vegetables weren’t drained well. Letting the ziti rest before serving also helps it set up properly.
◆ Can I make this ahead for a party?
Absolutely. Assemble it the day before, refrigerate, then bake when you’re ready to serve.

Meatless Baked Ziti
Ingredients
- 24 ounces ricotta cheese
- 3 cups mozzarella, shredded + DIVIDED
- 2 cups parmesan cheese, shredded + DIVIDED
- 2 large egg, lightly beaten
- 1 cup fresh basil, julienned
- 1 tablespoon and 2 teaspoons Italian seasoning, DIVIDED
- 1 1/2 teaspoons dried rosemary
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (16-ounce) box ziti
- 2 (24-ounce) jars marinara sauce
Instructions
- Arrange an oven rack to the lower third of the oven. Preheat oven to 350°F (177ºC) degrees.
- Butter a piece of foil, long enough to cover 9X13 inch baking dish, on one side, or spray with nonstick cooking spray.
- Pour 1 cup of sauce in the bottom of a 9X13 inch baking dish.
- Cook ziti (16 ounces) according to box instructions, in water with 2 tablespoons of salt, until not quite al dente, (I cooked for 7 minutes). Drain pasta well. Dry pasta pot.
- Return the well-drained ziti to the empty pasta pot and toss with all the remaining marinara sauce, and (1 tablespoon) dried Italian seasoning.
- In a large mixing bowl, stir together ricotta cheese (24 ounces), 1 1/2 cups of mozzarella, 1 cup parmesan, beaten egg (2), fresh basil (1 cup), the remaining 2 teaspoons Italian seasoning, dried rosemary (1 1/2 teaspoons), nutmeg (1/4 teaspoon), salt (1/2 teaspoon) and pepper (1/2 teaspoon) until well combined; set aside.
- Layer half the sauce coated pasta in the prepared baking dish.
- Spread the cheese mixture over the pasta layer.
- Top with remaining half of pasta then cover with prepared foil, butter side down on top of pasta. Bake until heated through and bubbly, about 35-40 minutes.
- Remove from oven and remove foil. Sprinkle top with remaining 1 1/2 cups of mozzarella then 1 cup of parmesan. Return to oven and continue to bake until cheese is completely melted and golden brown. Let sit for 10-12 minutes before serving.
Notes
- Less Than Al Dente: I like al dente pasta. Since the pasta is cooked first, then baked, I cook the pasta for 7 minutes at the most. The pasta will not be fully cooked. Once baked, the pasta will be perfectly cooked in the sauce.
- Subs: Of course, you can add meat to this dish such as ground beef or Italian sausage. There are many variations and this recipe can accommodate most any add-ons you like. Feel free to substitute the parmesan for other cheeses like Pecorino Romano. You can also use cottage cheese instead of ricotta.
- Add More Veggies! I try to incorporate veggies into dishes when I can, and spinach would be the perfect add-on. Frozen spinach can be incorporated into the ricotta mixture. Just make sure it's been very well dried or the sauce will thin out and be a mess. Or, add cooked zucchini or eggplant.
- Great Leftovers: This is a great dish for leftovers. It reheats nicely and may even taste better the next day! When reheating, you may want to add a little more marinara sauce or milk since the pasta will absorb moisture over time.
