Before You Start
→Bring Ingredients To Room Temperature: Bring egg, cream cheese, and milk to room temperature. Room temperature ingredients blend together more smoothly and evenly. Cold ingredients, especially cream cheese and egg, can cause the dough to be lumpy or create an uneven texture. When these ingredients are at room temperature, they mix together more easily, leading to a smoother dough and a more consistent cookie texture.
→Gather Your Ingredients: Make sure all your ingredients are measured out and ready to go.
→Preheat Your Oven: Set your oven to 350°F (175°C) so it’s fully preheated by the time you’re ready to bake. This ensures your cookies bake evenly and to perfection.
→Prepare Your Baking Sheets: Line your baking sheets with parchment paper or lightly grease them to prevent the cookies from sticking. If you have a cooling rack, have it ready to transfer the cookies once they’re baked.
→Prepare the Sugar Coating: Measure out the sugar for rolling the dough. Having it ready in a shallow dish will make the process quicker and easier when shaping your cookies.
Chewy Lime Cookie Recipe Ingredients
- All-Purpose Flour: This is the base for your cookies. Make sure to measure it correctly by whisking the flour in its canister, spooning the flour into the measuring cup, and leveling it off to avoid using too much, which can lead to dense cookies.
- Baking Soda & Baking Powder: Both are used to help the cookies rise. Baking soda reacts with the lime juice and cream cheese to give a light texture, while the baking powder provides additional lift for the cookies.
- Salt: Just a pinch of salt enhances the sweetness and balances the flavors. It helps bring out the coconut and lime.
- Sugar: The recipe uses sugar both in the dough and for rolling. Rolling the dough balls in sugar gives the cookies a delightful crunchy exterior. You can also use a little more sugar if you prefer a sweeter coating.
- Cream Cheese: Make sure the cream cheese is softened to room temperature. This ensures it blends smoothly with the butter and sugar, creating a soft, chewy texture. Full-fat cream cheese is recommended for the best flavor.
- Sweetened Shredded Coconut: This adds texture and a subtle coconut flavor to the cookies. Be sure to use sweetened shredded coconut, as unsweetened coconut will affect the flavor balance.
- Lime Zest: Fresh lime zest is key to the bright, zesty flavor in the cookies. Avoid using bottled lime juice for the zest, as it doesn’t have the same aromatic qualities as freshly grated lime.
- Unsalted Butter: Always use unsalted butter so you can control the amount of salt in your recipe. The butter should be melted but still warm to help incorporate it easily into the dough.
- Vegetable Oil: This helps give the cookies a soft texture, ensuring they remain chewy. You can substitute with other neutral oils if needed, but vegetable oil works best for this recipe.
- Egg: Use a large egg at room temperature for better incorporation into the dough. Room temperature eggs help emulsify the dough, leading to a smoother texture.
- Milk: Use whole milk for the best texture and flavor. It should also be at room temperature to prevent the dough from becoming lumpy.
- Lime Juice: Fresh lime juice gives a vibrant flavor to these cookies. It’s essential to balance the sweetness with the tartness of the lime, so fresh lime juice is best.
Tips + Tricks
- Make ’em Crispy! For a firmer, crispier cookie, flatten the dough balls a bit more before baking.
- Coarse Salt: Add a pinch of coarse sea salt (I love using light Grey Celtic Sea Salt) on top of the cookies before baking for a sweet-salty contrast.
- Toast It: For a stronger coconut flavor, use toasted coconut instead of shredded coconut.
Storing + Freezing + Make-Ahead
- Storing Tips: Be sure to allow the chewy lime cookies to cool completely before storing. If you’re planning to enjoy the cookies within a few days, store them in an airtight container at room temperature. They should stay fresh for about 3–4 days.
- Refrigeration: To keep them fresh for longer, store the cookies in the fridge. Make sure they’re in an airtight container to prevent them from absorbing any moisture or odors from the fridge. They’ll stay fresh for up to a week when refrigerated.
- Freezing: For long-term storage, you can freeze these cookies! To freeze, place them in a single layer on a baking sheet and freeze for about 1–2 hours, until firm. Then, transfer them to an airtight freezer-safe container or freezer bag. This prevents the cookies from sticking together.
- They’ll stay good for up to 3 months in the freezer. When you’re ready to eat them, let them thaw at room temperature for about 30 minutes, or you can warm them up in the oven for a few minutes to make them extra soft.
- Make-Ahead Tips: The dough for this cookie will keep in the fridge for up to 2 days.

Chewy Lime Cookies
Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 ounces cream cheese cut into 8 pieces
- 1/2 cup sweetened shredded coconut
- 1 teaspoon lime zest
- 6 tablespoons unsalted butter melted but still warm
- 1/3 cup vegetable oil
- 1 large egg
- 1 tablespoon milk
- 1 tablespoon fresh lime juice
Instructions
- Preheat oven to 350ºF (177ºC).
- In a medium bowl, whisk together the flour, coconut, baking soda, baking powder, and salt.
- In a large bowl add 1 1/2 cups of sugar, the lime zest, and cream cheese yet. Put the remaining 1/3 cup sugar in a pie plate and set aside. Pour the warm butter over the cream cheese mixture and whisk to combine - the mixture won't be completely smooth yet, that's fine. Add the oil, egg, milk and lime juice. Mix until smooth.
- Use a rubber spatula to fold the dry ingredients into the wet, until a soft dough comes together.
- Using a small cookie scoop form the dough into balls, roll in the reserved sugar and place on cookies sheets. When cookie sheet is full, use the bottom of a drinking glass to gently flatten cookies down into a disk. Try to work quickly as handling the dough too will produce flatter cookies
- Bake the cookies, 1 tray at a time, for about 11-13 minutes, or until the edges are set and beginning to brown. The tops will be puffy and slightly cracked. Transfer the baking sheet to a wire rack and let the cookies cool on the sheet for 5 minutes then transfer them to the rack to cool completely.
