This Instant Pot Turkey Chili is thick, hearty, and loaded with rich, slow-simmered flavor—without spending hours on the stove. Tender ground turkey, two kinds of beans, bell peppers, and corn simmer in a boldly seasoned tomato base with a few secret ingredients that give every bowl incredible depth.
The real magic is in the flavor-building: I brown the turkey, bloom the spices, then add beer, Worcestershire, cocoa, and a touch of coffee before pressure cooking everything together. You won’t taste any one of those ingredients—they simply make this turkey chili taste richer and more savory.

✨ Before You Begin
✨ Have everything measured and ready. Once you start sautéing, this recipe moves quickly. Measure the spices, drain the beans and corn, and have the remaining ingredients ready to add.
✨ Brown the turkey in batches if needed. You want the turkey to cook rather than steam. If it releases a substantial amount of liquid, transfer the turkey to a plate and discard the excess liquid before continuing.
✨ Deglaze the pot really well. After adding the beer, scrape up every browned bit stuck to the bottom. This gives the chili extra flavor and, more importantly, helps prevent a Burn warning.
✨ Don’t stir in the tomatoes. Once the turkey, beans, and corn are combined, pour the crushed tomatoes and tomato sauce over the top and leave them there. Keeping the thick tomato products off the bottom helps prevent scorching during pressure cooking.
✨ Plan for the natural release. After pressure cooking for 15 minutes, let the pressure release naturally for another 15 minutes before venting the remaining pressure. Build that extra time into your dinner plans.
Ingredients + Key Notes
Ground Turkey: I use 93% lean ground turkey. It has enough fat to stay flavorful and tender without making the chili greasy.
Chili Powder: This provides the primary chili flavor, while cumin, coriander, oregano, and smoked paprika add warmth, earthiness, and a subtle smoky note. Use a standard American chili powder blend rather than a pure ground chile pepper.
Beer: A mild beer adds malty depth and helps deglaze all those flavorful browned bits from the bottom of the Instant Pot. Avoid strongly flavored or bitter beers that can overpower the chili.
Cocoa Powder: This is one of my favorite little chili secrets. Unsweetened cocoa adds richness and depth without making the finished chili taste like chocolate.
Instant Coffee: Just a teaspoon enhances the roasted, savory flavors already happening in the pot. You won’t taste coffee in the finished chili.
Worcestershire Sauce: Especially helpful with lean turkey, Worcestershire adds another layer of savory, meaty flavor.
Beans: Pinto and kidney beans give the chili a nice mix of textures. Drain and rinse them before adding them to the pot.
Crushed Tomatoes + Tomato Sauce: Together they make a thick, rich tomato base. They also need to be layered on top of the other ingredients rather than stirred in before pressure cooking to help prevent a Burn warning.
Jalapeño: Removing the seeds and ribs keeps the heat fairly mild while still adding fresh chile flavor. Leave some of them in if you prefer a hotter chili.
Corn: Adds little pops of sweetness that balance the tomatoes, spices, and savory ingredients.
🥣 How to Make Instant Pot Turkey Chili
Brown the turkey. Sauté the ground turkey with salt until cooked through, then transfer it to a plate.
Sauté the vegetables. Cook the onion, bell peppers, and jalapeño until they begin to soften, then add the garlic.
Build the flavor. Add the seasonings and cocoa and cook briefly until fragrant. Pour in the beer, scraping the bottom of the pot thoroughly, then stir in the Worcestershire and coffee.
Layer and pressure cook. Return the turkey to the pot and stir in the beans and corn. Pour the crushed tomatoes and tomato sauce over the top without stirring. Pressure cook on High for 15 minutes, followed by a 15-minute natural release.
Finish and serve. Release any remaining pressure, carefully open the lid, stir the chili, adjust the seasoning, and serve with your favorite toppings.

⭐ Pro Tips
⭐ Give the turkey a chance to brown. If it releases a lot of liquid, remove the turkey and discard the excess before continuing. Browning adds much more flavor than letting the meat steam in the pot.
⭐ Bloom the spices. Cooking the spices briefly in the sautéed vegetables and oil wakes up their flavor before the liquid goes in. Stir constantly and cook only until fragrant so they don’t burn.
⭐ Don’t skip the deglazing. Scrape the bottom of the pot thoroughly when you add the beer. Those browned bits add wonderful flavor, and leaving them stuck to the pot can trigger a Burn warning.
⭐ Leave the tomatoes on top. Once you add the crushed tomatoes and tomato sauce, don’t stir. Keeping the thick tomato products away from the bottom of the pot helps prevent scorching.
⭐ Let the pressure release naturally. The 15-minute natural release gives the chili additional time for the flavors to meld and helps everything settle before you vent the remaining pressure.
⭐ Let it rest before serving. If you have the time, give the finished chili 10–15 minutes to sit after opening the pot. It will thicken slightly and the flavors become even more cohesive.
⭐ Don’t forget the toppings. Corn chips, shredded cheese, red onion, avocado, and sour cream add contrasting textures and make each bowl even better.

To Reheat: Warm the chili gently on the stovetop over medium-low heat, stirring occasionally, or reheat individual portions in the microwave. If it has thickened considerably in the refrigerator, stir in a splash of broth or water until it reaches the consistency you like.
Make Ahead: This chili is a great make-ahead meal and tastes even better the next day as the flavors have more time to meld. Prepare it completely, cool, and refrigerate until you’re ready to reheat and serve.

◆ Is Instant Pot Turkey Chili spicy?
This chili is mildly spicy. Removing the seeds and ribs from the jalapeño keeps the heat fairly gentle. For more heat, leave some of the seeds and ribs intact or add a pinch of cayenne pepper.
◆ Can I make Instant Pot Turkey Chili without beer?
Yes. Replace the beer with an equal amount of chicken broth or beef broth. The flavor won’t have quite the same malty depth, but the chili will still be delicious.
◆ Why did I get a Burn warning on my Instant Pot?
The two most important things are thoroughly deglazing the pot and layering the tomatoes correctly. After sautéing, scrape every browned bit from the bottom when you add the beer. Once the crushed tomatoes and tomato sauce are poured over the top, don’t stir them into the chili before pressure cooking.
◆ Can I use different beans?
Absolutely. Black beans are a great substitute for either the kidney or pinto beans. Just use canned beans, drain and rinse them first, and keep the total amount about the same.
◆ Can I use ground beef instead of ground turkey?
Yes. Ground beef works well using the same method. After browning, drain off excess fat before continuing with the recipe.

Instant Pot Turkey Chili
Ingredients
- 2 tablespoons vegetable oil
- 1 1/2 pound ground turkey
- 1 1/2 cup onion, diced
- 1 tablespoon garlic, minced
- 2 medium red bell peppers, seeded, ribs removed and diced
- 1 medium jalapeno, seeded, ribs removed and minced
- 2 teaspoons salt, divided
- 1 teaspoon black pepper, divided
- 1 tablespoon unsweetened cocoa powder
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoons ground coriander
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 cup mild beer
- 1 (15-ounce can) crushed tomatoes
- 1 (8-ounce) can tomato sauce
- 1 1/2 tablespoon Worcestershire sauce
- 1 teaspoon instant decaffeinated coffee crystals
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn, drained

Instructions
- Cook Turkey: Set a 6-quart Instant Pot to Sauté. When hot, add 1 tablespoon oil and the ground turkey. Sprinkle with 1 1/2 teaspoon salt, 1/2 teaspoon black pepper and cook until no longer pink, breaking the turkey into bite-size crumbles.Using a slotted spoon, transfer the turkey to a plate. If the turkey releases a substantial puddle of liquid, discard the excess liquid.
- Build the vegetable base: Add the remaining tablespoon oil. Add the onion, red bell peppers and jalapeño. Cook for 4–5 minutes, until the onion begins to soften.Add the garlic and cook for 30 seconds.
- Bloom the seasonings: Add the chili powder, cumin, coriander, smoked paprika, oregano, cocoa powder, remaining 1/2 teaspoon salt, and remaining 1/2 teaspoon black pepper.Cook, stirring constantly, for about 30 seconds, just until fragrant.
- Deglaze: Pour in the beer and scrape the bottom of the pot extremely well, loosening every browned bit.Stir in the Worcestershire and instant coffee. Let the mixture simmer for 1–2 minutes.
- Add the turkey, beans, and corn: Return the turkey and any accumulated juices to the pot. Add the kidney beans, pinto beans, and corn and stir until the mixture is evenly combined.
- Layer: Pour the crushed tomatoes evenly over the top, followed by the tomato sauce. DO NOT STIR after adding the tomatoes.
- Cook: Place the lid on and set the “steam release” knob to “sealing”. Press the “Manual” button and set to pressure cook on high for 15 minutes.
- Natural Release: When the pressure cooking cycle is complete, allow the pressure to release naturally for 15 minutes. Then carefully turn the steam release knob to Venting to release any remaining pressure.
- Finish: After the pin drops, carefully open lid away from you (there will likely still be remaining steam). Stir the chili. Adjust seasoning, ladle into individual bowls and top with desired toppings.
