Crockpot Italian Beef Sandwiches are a classic Chicago-style favorite made with chuck roast, Italian dressing mix, pepperoncini, and beef broth, slow cooked until the meat is fall-apart tender and swimming in a rich, dippable jus. The beef shreds easily, stays juicy, and is piled high on toasted rolls with melted provolone for a messy-in-the-best-way sandwich everyone loves.
This is a true dump-and-go slow cooker recipe that delivers big, familiar Italian beef flavor with very little effort — perfect for busy weeknights, game day, or feeding a crowd. And if you want that extra Chicago touch, you can add giardiniera for heat and crunch (totally optional).
A little crispy bread, melty provolone, juicy shredded beef… dinner is DONE. 💛
Chicago-Style Crockpot Italian Beef: At a Glance
This slow cooker Italian beef uses chuck roast, Italian dressing mix, pepperoncini, and beef broth — the same core formula behind classic Chicago-style Italian beef sandwiches.
Crockpot Italian Beef Sandwiches Ingredients + Key Notes
This is a quick look at what you’ll need. For exact measurements, scroll down to the recipe card below.
-
Chuck Roast – The best cut for crockpot Italian beef; it cooks until tender and easy to shred. Leaner cuts won’t get as juicy.
-
Beef Broth – Keeps the beef moist and becomes the flavorful jus for dipping.
-
Good Seasons Zesty Italian Dressing Mix – The classic shortcut seasoning that gives Italian beef its signature flavor.
-
Italian Seasoning + Black Pepper – Adds extra savory depth without overpowering the beef.
-
Pepperoncini – Adds tang and flavor more than heat; use more or less to taste.
-
Giardiniera (optional) – A traditional Chicago-style topping for extra heat and crunch, but not required.
-
Butter – Adds richness and helps toast the rolls.
-
Provolone Cheese – Mild, melty, and classic for Italian beef sandwiches.
-
French Rolls or Hoagie Rolls – Use sturdy rolls and toast them so they don’t get soggy.
🥣 How To Make Crockpot Italian Beef Sandwiches
This is a simple, hands-off slow cooker recipe — most of the work happens while the crockpot does its thing.
-
Add the beef. Place the chuck roast in the slow cooker.
-
Season + add liquid. Sprinkle the Italian dressing mix, Italian seasoning, and black pepper over the beef. Pour in the beef broth and add the pepperoncini.
-
Slow cook. Cover and cook on LOW for 8–10 hours, until the beef is fork-tender and easy to shred.
-
Shred the beef. Remove the beef from the slow cooker and shred it with two forks, then return it to the juices and stir to coat.
-
Assemble the sandwiches. Pile the juicy beef onto split rolls, top with provolone cheese, and broil briefly until melted. Spoon extra jus over the sandwiches or serve it on the side for dipping.
Recipe Notes
-
Chuck Roast — The best cut for Italian beef because it turns fall-apart tender and shreds easily after a long, slow cook.
-
Rolls — Sourdough, French rolls, or hoagie rolls all work. Butter first, then toast so the sandwiches stay crisp (not soggy).
-
Zesty Italian Dressing Mix — One envelope works great for most roasts. If your roast is over 5 pounds, add ½ of a second envelope for extra seasoning.
-
Large Roast Tip — If your roast is over 4–5 pounds, cut it into 2–3 large chunks so it cooks more evenly.
-
Doneness — If the beef doesn’t shred easily, it needs more time. Keep cooking on LOW and check again in 30–60 minutes.
🔬 Kitchen Science: Why Chuck Roast Works
Chuck roast is loaded with collagen, and slow heat + time transforms that collagen into gelatin. Gelatin is what gives the meat its juicy, silky, shred-perfect texture. No other cut gets you quite the same result in the crockpot.
Storing + Reheating + Freezing + Make-Ahead Tips
Storing
- Store cooked meat (without the bread) in an airtight container for up to 4 days. Fully assembled sandwiches will get soggy—assemble only what you’ll eat immediately.
Reheating
- Warm the beef gently in a saucepan over medium-low heat, or microwave in short bursts. Add a splash of broth if needed.
Freezing
- Italian beef freezes beautifully. Freeze in airtight containers for up to 3 months. Thaw overnight in the fridge.
Make-Ahead
- Slow cooker recipes are naturally make-ahead friendly—start it in the morning and assemble sandwiches when ready to serve.

Frequently Asked Questions
✦ What cut of beef is best for crockpot Italian beef?
Chuck roast is the best choice because it has enough marbling to stay juicy and it turns shreddable and tender after a long, slow cook. If you use a leaner roast, the beef can turn drier and less flavorful.
✦ Can I use rump roast or bottom round instead of chuck?
Yes. Rump roast, bottom round, or top round will work, but they’re leaner than chuck. Plan to cook on LOW until fork-tender and consider adding a little extra broth to keep the meat juicy.
✦ Can I cook crockpot Italian beef on HIGH?
Yes, but LOW is better for the most tender, shreddable beef. If you’re short on time, cook on HIGH for about 4–6 hours, then check for doneness — it should shred easily with a fork.
✦ How do I know when the beef is done?
It’s done when it’s very tender and shreds easily. If it still feels tough or “stringy” when you pull it, it needs more time — keep cooking and check again in 30–60 minutes.
✦ Is crockpot Italian beef spicy?
It’s usually mild with a little tang. Pepperoncini add flavor more than heat, and you can control spice by using fewer peppers (or skipping giardiniera). If you want it hotter, add spicy giardiniera or a pinch of red pepper flakes.
✦ Do I have to use giardiniera?
No. Giardiniera is a classic Chicago-style topping, but it’s optional. The recipe is still delicious with just pepperoncini (or even without peppers if you want it very mild).
✦ Can I make crockpot Italian beef ahead of time?
Yes — it’s even better the next day. Cook the beef, shred it, and store it in the juices. Reheat gently and serve on fresh toasted rolls.
✦ How do I store and reheat leftovers?
Store the beef in an airtight container with the cooking juices in the fridge for up to 4 days. Reheat on the stove over low heat or in the microwave in short bursts, adding a splash of broth if needed.
✦ Can I freeze crockpot Italian beef?
Yes. Freeze the shredded beef with some of the jus in a freezer-safe bag or container for up to 3 months. Thaw overnight in the fridge, then reheat gently with the juices.
✦ How do I keep Italian beef sandwiches from getting soggy?
Toast the rolls first and add the cheese as a barrier. Serve the jus on the side for dipping instead of pouring a lot over the sandwich, or spoon just a little onto the meat.

Notes
- Chuck Roast: What, exactly, is a chuck roast, and why is it important you get this type of beef? It has a high collagen level which works great when slow cooking — that collagen breaks down over time, giving you the signature tender beef you’re looking for! When it's all cooked it's melt-in-your-mouth delicious!
- Rolls: I use either sourdough rolls, french rolls, and hoagie rolls depending on my mood and what looks best at the market. The important thing is to butter them up before you toast them.
- Good Seasons Zesty Italian salad dressing mix: If I'm making this recipe with a large roast, like over 5 pounds, I open up another envelope of Good Seasons Zesty Italian salad dressing mix and add half of the second envelope.
- Larger Roast: if you use a roast larger than 5 pounds, cut it up into large chunks, before adding it to your crockpot.
- How Long Can You Keep This In The Fridge? Once fully cooked, your meat will last up to four days in your fridge. If you are planning to store leftovers, only make full sandwiches that you’re planning to eat right then. The meat and bread will very quickly turn soggy, which isn’t good for leftovers!
- Can You Freeze This Recipe? Yes! Freeze the cooked beef, thaw in the fridge overnight, and assemble your sandwiches. Beef does very well in the freezer. Store it in airtight containers and let it sit in your freezer for up to three months.
- Make Ahead Tips: Slow cooker recipes are made for make-ahead! Start this process up to eight hours before serving, then just assemble your sandwiches when dinner’s on. It’s got make-ahead magic built right in!
