Nothing says Fall like my moist and decadent apple bead covered in a sweet caramel glaze and sprinkled with pecans. I always keep goodies in the kitchen for my family. When the kids need a little snack after school, you can bet that my apple bread is a favorite sweet treat.
This recipe makes two loaves, one for the counter and one to freeze for later. This is a moist cake-like bread that’s filled with bits of apple, crunchy pecans, and classic warm spices. My apple bread will ring in autumn in the most delicious way!

APPLE BREAD RECIPE INGREDIENTS
- All-Purpose Flour
- Baking Powder: Leavening to make the cake light and fluffy.
- Baking Soda: More leavening to interact with all the ingredients.
- Salt: Table salt to balance the sweetness
- Cinnamon/Nutmeg/Cloves: Classic warm spices that perfectly highlight the apples
- Sugar: White granulated sugar to sweetness
- Brown Sugar: I use dark brown sugar for depth of flavor. Light brown sugar will work too.
- Eggs: For moisture and leavening. I use large eggs.
- Vegetable Oil: Oil adds moisture to the cake. Oil makes a lighter crumb compared to butter.
- Vanilla Extract: 100% vanilla extract adds so much flavor.
- Granny Smith Apples: These are the perfect cooking apples that remain tart and crispy after baking.
- Pecans Chopped: I love pecans for crunch and nuttiness.
- Butter: Unsalted
- Milk: Whole milk
- Powder Sugar: Melts easily for a smooth glaze

- Make It Sweeter: If you prefer a sweeter apple, use Pink Lady, Fuji, or Honeycrisp apples. I prefer Granny Smith because they hold their shape, stay crisp and a little tart. The tartness is a surprise pop of flavor that I enjoy. Please feel free to use any apple variety that you like.
- Glaze It! Once the glaze is made, spread it on the cooled loaves immediately. The glaze will begin to harden so once it is on the bread, have the pecans chopped and ready to sprinkle on top.
- Butter: If you prefer, you can substitute butter for oil. However, the cake will be heavier.
- Vegan Version: You can easily make this recipe free of animal products! Replace eggs with a vegan egg substitute in the batter, and for the glaze sub in coconut oil for butter and unsweetened vanilla almond milk instead of cow’s milk. Bam! Apple bread vegan friendly.
HOW TO MAKE APPLE BREAD
- Mix the dry ingredients.
- In a separate bowl, mix eggs, oil, and vanilla.
- Add the egg mixture to the flour mixture.
- Mix.
- Add the pecans and apples to the batter.
- Mix
- Transfer the batter to two baking pans. Bake.
- Cool the bread on a cooling rack.
- Make the glaze and pour it over the cooled bread. Sprinkle with chopped pecans.

STORING + FREEZING + MAKE-AHEAD
- How Long Can You Keep This In The Fridge? This apple cinnamon bread can be kept in the fridge for a week.
- Can You Freeze This? Once the apple bread with pecans is baked, let it cool slightly and then toss it in the freezer. It will keep wonderfully for up to three months.
- Make-Ahead Tips: This apple pecan bread is great for bake sales, because a single batch of batter makes two loaves. You’re already ahead of the game. For events like a brunch or bake sales, you’ll definitely want to whip this up ahead of time! You can bake up a bunch of loaves a week or so in advance and freeze them the same day. Apple Bread
Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1 cup sugar
- 1 cup brown sugar packed
- 3 large eggs
- 1 cup vegetable oil
- 1 tablespoon vanilla extract
- 2 cups Granny Smith apples peeled, vored, and diced
- 1 cup pecans chopped
Praline Glaze:
- 1/4 cup unsalted butter
- 1/2 cup brown sugar firmly packed
- 3 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup powder sugar
- 1 cup pecans chopped
Instructions
Make The Bread:
- Preheat oven to 350ºF (177ºC). Spray two 8X4 inch baking pans with nonstick cooking spray.
- In a large bowl whisk together the first nine ingredients. In a separate bowl, mix eggs (3), oil (1 cup), and vanilla (1 tablespoon). Add the egg mixture to the flour mixture and combine. (The batter will be extremely thick). Mix in apples (2 cups) and 1 cup chopped pecans until evenly distributed through the batter.
- Spoon batter evenly into prepared pans and smooth out the top of the batter with the back of a spoon. Bake in the preheated oven for 50-55 minutes or until a toothpick inserted into the center of the loaf comes out clean and the edges of the bread are just pulling away from the baking pan.
Make The Glaze:
- In a heavy-bottomed 2-quart saucepan, bring brown sugar (1/2 cup), butter (1/4 cup), and milk (3 tablespoons) to a boil over medium heat. Boil for 1 minute, whisking constantly. Remove from heat.
- Add vanilla (1 teaspoon) and powdered sugar (1 cup) and using a hand-held electric mixer beat on medium speed until smooth. Pour half the glaze immediately over each loaf of cooled bread and sprinkle evenly with pecans (1 cup).

Made this loaf today and although the taste is really nice the bread itself was a little dry and when cut it would crumble.
