These Crispy Zucchini Corn Fritters are one of my favorite ways to use fresh summer zucchini! Packed with sweet corn, sharp cheddar cheese, and savory seasonings, they’re crispy on the outside, tender inside, and perfect as a side dish, appetizer, or light lunch. Serve them warm with a dollop of sour cream or your favorite dipping sauce for an easy recipe everyone will love.

✨ Dry the zucchini well. The drier the zucchini, the crispier your fritters will be. After salting, squeeze out as much moisture as possible using a clean kitchen towel.
✨ Use the large holes of a box grater. Coarsely shredded zucchini gives the fritters the best texture and helps them hold together.
✨ Don’t overcrowd the skillet. Cook the fritters in batches so they brown evenly and develop crisp, golden edges.
✨ Keep them warm while you finish cooking. Place cooked fritters on a baking sheet in a 250°F oven until all the batches are ready to serve.

Zucchini: Use the coarse side of a box grater and leave the skin on. After shredding, salt the zucchini and squeeze out as much moisture as possible for crispy fritters.
Corn: Fresh sweet corn is delicious when it’s in season, but canned or thawed frozen corn kernels work just as well.
Cheddar Cheese: Sharp cheddar adds the most flavor, though mild cheddar is a great option if that’s what you have on hand.
Flour and Eggs: These bind the fritters together while keeping them tender inside.
Green Onions and Garlic: These add fresh, savory flavor that complements both the zucchini and the sweet corn.
Seasonings: Paprika, cumin, seasoned salt, and black pepper add just enough warmth and savory flavor without overpowering the fresh vegetables.
🥣 How to Make Crispy Zucchini Corn Fritters
Prep the zucchini. Place the shredded zucchini in a colander and sprinkle with the salt. Let stand for 15–20 minutes. Transfer the zucchini to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
Mix the batter. Add the zucchini to a large bowl along with the corn, eggs, flour, cheddar cheese, garlic, green onions, seasoned salt, black pepper, paprika, and cumin. Stir until everything is evenly combined.
Cook the fritters. Heat 2 tablespoons of vegetable oil in a large nonstick skillet over medium heat. Scoop heaping tablespoons of batter into the skillet, gently flattening each into a round with the back of a spoon. Cook for 3–4 minutes per side, or until golden brown and crispy. Add more oil between batches as needed.
Keep warm and serve. Transfer the cooked fritters to a baking sheet and keep warm in a 250°F oven while you finish cooking the remaining batches. Serve warm with sour cream, garlic aioli, ranch dressing, or your favorite dipping sauce.

Reheating: For the crispiest texture, reheat the fritters in a skillet over medium heat, in a 350°F oven, or in an air fryer until heated through. Microwaving works in a pinch, but the fritters won’t be as crisp.
Freezing: Arrange the cooled fritters in a single layer on a baking sheet and freeze until solid. Transfer them to a freezer-safe bag or container and freeze for up to 2 months. Reheat from frozen in the oven or air fryer until hot and crispy.
Make-Ahead: Shred and drain the zucchini up to 1 day ahead of time and refrigerate it in an airtight container. You can also cook the fritters in advance and reheat them just before serving for an easy side dish or appetizer.

Ingredients

- 1 cup corn, fresh, canned, or thawed frozen

- 1/2 teaspoon seasoned salt

- 2-3 tablespoons vegetable oil
