This simple and easy-to-fix, sausage green bean potato casserole has all of my favorite ingredients in one delicious baking dish! This is my kind of cooking!! Great, flavorful, easy-to-find ingredients, easy to put together, delicious results that bring the whole family to the table!
This recipe works well as an entree or a side dish for potlucks, holiday meals, church suppers, and, as I often serve it for BBQs. You can make it on the stovetop and oven or stovetop and crockpot. Both methods work equally well and are convenient for different circumstances and events.
When I’m taking it to a community event or serving it alongside BBQ I like the stovetop crockpot method best. If it’s being served for dinner, I go the stovetop oven route. Don’t you love recipes that you can tweak to best serve your circumstances?
I hope you will try some more of my delicious sausage recipes made with Polska Kielbasa. I love this sausage. Try my black eyed pea soup, sausage and bean soup (family fav for 30+ years!) chicken Tortellini Soup (with sausage, of course!!), and one pan sausage and rice! You’ll love all these recipes, I promise! ♥
Let’s make this!
Sausage Green Bean Potato Casserole Ingredients
- Oil: Use any neutral flavored oil with a high smoke point
- Polska Kielbasa: There are many varieties of Polska Kielbasa. I like to use Hillshire Farms (no endorsement from the company) Turkey Polska Kielbasa.
- Potatoes: I use petite gold potatoes. They’re just the right amount of starchy and creamy! You can replace it with Russet potatoes. Just cut them into large 1-1 1/2 inch chunks.
- Green Beans: Fresh green beans, trimmed and cut in half.
- Onion: I use a yellow onion, aka Spanish onion. You can also use white onion.
- Garlic: Please use fresh garlic, not the pre-minced stuff in a jar. Check out this article from Bon Appetit to see why I NEVER use that stuff!
- Creole Seasoning: I like the brand Tony Chachere’s creole seasoning.
- Garlic Powder: To impart a mild garlic flavor.
- Onion Powder: To impart a mild onion flavor.
- Black Pepper + Salt: Because every savory recipe needs it!
Storing + Freezing + Make-Ahead
- How Long Can You Keep This In The Fridge? Leftovers can be stored in the fridge for 3-4 days.
- Can You Freeze This? Store it in a Ziploc bag and it can be frozen for up to 6 months!
- Make-Ahead Tips: Chop all the veggies ahead and place them in the fridge.
- Food Safety: If you’d like more info on food safety check out this link.
Serving Recommendations
What I love most about casseroles is there is a complete meal in one baking dish. This is a perfect example of that type of casserole! That said, I love to always add more. I generally serve this with either Bisquick biscuits, Southern cornbread, beer bread, garlic bread (truly the best garlic bread I’ve ever had in my life!), or my addictive, copycat Olive Garden bread sticks!
I mean, truly, isn’t everything better with a homemade biscuit or bread? All of these are, I promise, delicious choices your family will be thrilled with! ♥

Can you use canned green beans?
Hi, Lesley. I prefer using fresh green beans.
I made these and had my daughter over for dinner. As I was putting the leftovers away I asked her if she would like to take some to work tomorrow. She said yes, grabbed the tray and ran out the door.
Hi, Karen! LOL, that’s so cute! She really loved it haha. Thank you so much for your positive feedback 🙂
I’m making this today and am wondering since I am using a homemade salt-free creole seasoning, should I double the salt? Thanks.
Hi, Marianne. Yes, and add the extra salt after baking to taste.
I ended up adding it with the rest of the seasoning (because I made it before you were able to reply) and it turned out just fine. I’m sure I will be making this one again. 👍
Oops! Sorry. I’m glad it went well!
Extraordinary! I made this but basically doubled the recipe and didn’t have enough fresh green beans. I added about a cup of washed and quartered Brussels sprouts to make up for the beans . It was delicious and my family really enjoyed it too. I will add this to my permanent recipes file! Kathleen once again, didn’t disappoint! 🙂
Thank you Tricia, so glad you found another recipe you enjoyed!
