This simple and easy-to-fix, sausage green bean potato casserole has all of my favorite ingredients in one delicious baking dish! This is my kind of cooking!! Great, flavorful, easy-to-find ingredients, easy to put together, delicious results that bring the whole family to the table!
This recipe works well as an entree or a side dish for potlucks, holiday meals, church suppers, and, as I often serve it for BBQs. You can make it on the stovetop, in the oven, or in the crockpot. Both methods work equally well and are convenient for different circumstances and events.
When I’m taking it to a community event or serving it alongside BBQ, I like the stovetop crockpot method best. If it’s being served for dinner, I go the stovetop oven route. Don’t you love recipes that you can tweak to best serve your circumstances?

Before You Begin
✨ Pick the Right Sausage: Polska Kielbasa brings a smoky, savory punch, but feel free to use andouille or smoked sausage for extra spice.
✨ Fresh Green Beans = Best Flavor: They’ll stay crisp-tender after baking. Frozen beans work in a pinch—just thaw and pat dry before using.
✨ Potato Perfection: Petite gold potatoes hold their shape and get creamy when baked. If using russets or red potatoes, cut them into uniform 1-inch chunks so they cook evenly.
✨ Even Spice Coverage: Sprinkle the seasoning in layers while tossing the veggies to avoid clumps and ensure every bite is well-seasoned.
✨ Check Doneness: Pierce a potato with a fork before pulling the casserole out of the oven—it should be tender but not falling apart.
Sausage Green Bean Potato Casserole Ingredients
- Oil: Use any neutral flavored oil with a high smoke point
- Polska Kielbasa: There are many varieties of Polska Kielbasa. I’ve recently discovered a new brand, no endorsement, just my opinion: Kiolbassa Provision Co. Sausage, Traditional, Pork & Beef, Hickory Smoked. If you can find it, use it! It’s so much better than the sausage from Hillshire Farms, in my humble opinion.
- Potatoes: I use petite gold potatoes. They’re just the right amount of starchy and creamy! You can replace it with Russet potatoes. Just cut them into large 1-1 1/2 inch chunks. Baby creamer potatoes work the same.
- Green Beans: Fresh green beans, trimmed and cut in half.
- Onion: I use a yellow onion, aka Spanish onion. You can also use white onion. I like them sliced but chopped onions work equally well.
- Garlic: Please use fresh garlic, not the pre-minced stuff in a jar. Check out this article from Bon Appétit to see why I NEVER use that stuff!
- Seasoning: I like the brand Tony Chachere’s Creole seasoning or slap ya mama cajun seasoning
- Garlic Powder: To impart a mild garlic flavor.
- Onion Powder: To impart a mild onion flavor.
- Black Pepper + Salt: Because every savory recipe needs it!
Storing + Freezing + Make-Ahead
- How Long Can You Keep This In The Refrigerator? Leftovers can be stored in the fridge for 3-4 days. Store in an airtight container.
- Can You Freeze This? Store it in a Ziploc bag and it can be frozen for up to 6 months!

Sausage Green Bean Potato Casserole
Ingredients
- 3 tablespoons vegetable oil, divided
- 14 ounces Polska Kielbasa
- 1 1/2 pounds petite gold potatoes, washed and cut in half
- 1 pound fresh green beans, washed, trimmed, cut in half
- 1/2 cup onion, sliced
- 4 cloves garlic, sliced
- 1 teaspoon creole seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Preheat oven to 400°F (204°C). Spray a 9x13-inch baking dish with nonstick cooking spray; set aside.
- Heat 1 tablespoon of vegetable oil in a 12-inch skillet. Add sliced Polska Kielbasa (14 ounces) and brown over medium heat. Flip the sausage and brown on the second side.
- In a large mixing bowl, toss the potatoes (1 1/2 pounds), green beans (1 pound), onion (1/2 cup), and garlic (4 cloves) with 2 tablespoons of vegetable oil until evenly coated.
- In a small mixing bowl, evenly combine creole seasoning (1 teaspoon), garlic powder (1 teaspoon), onion powder (1 teaspoon), black pepper (1/2 teaspoon), and salt (1/4 teaspoon).
- Sprinkle the spice mixture gradually over the vegetables, tossing in between addition, to evenly coat vegetables with the spice mixture.
- Pour vegetables and cooked sausage into the baking pan and combine. Cover with aluminum foil and bake in preheated oven for 40 minutes or until potatoes are tender when pierced with a fork.

Made this on a Friday to eat over the weekend it was delicious. I used frozen green beans instead of fresh and I added some zesty shredded cheese on top after it was cooked. I only have one question how long is this dish good for in the refrigerator?

Extraordinary! I made this but basically doubled the recipe and didn’t have enough fresh green beans. I added about a cup of washed and quartered Brussels sprouts to make up for the beans . It was delicious and my family really enjoyed it too. I will add this to my permanent recipes file! Kathleen once again, didn’t disappoint! 🙂
