Hot Water Cornbread Recipe

Crispy corn cakes suited for snacking and savory-soup-soaking, this Hot Water Cornbread will be welcome at your dining table any time! As foodies, many memories are permanently imprinted on our psyches through food. Maybe it was that pasta dish on your honeymoon, or the chicken soup your best friend shared after a big break-up, or Aunt Ida’s infamous congealed salad that made an appearance every Thanksgiving. One of these tasty memories for me is being at my grandmother’s house and watching her skilled hands pat out little pieces of Hot Water Cornbread. She’d serve these warm, crispy crunchers with homemade soup and chili, and we’d occasionally coerce her into making them for an afternoon snack because we could never get enough of them. Unfortunately, like many old family recipes, this one was documented in her head not on a piece of paper, so bringing those memories into my own kitchen was a challenge. Since cornbread is a Southern favorite, I looked for guidance from trusted resources – maybe a hot water cornbread Paula Deen version or a Patti Labelle hot water cornbread recipe. Ultimately I found success on my own, though, after lots of trial and error, I came up with something close to the texture and flavor I remember. Later, when I decided to experiment with the recipe, a little Southern Living inspiration lead to the addition of...

Cavatappi with Creamy Tomato Sauce

Savor the flavors of Florence in my Cavatappi with Creamy Tomato Sauce. No passport required! As some of you may know, I’ve dubbed myself a “reluctant exerciser,” and finding motivation is essential when you’re in the kitchen all day with amazing food. For some, that little nudge into the gym may be a great playlist blasting in their ears; for others it’s an encouraging friend who holds you accountable for your daily walk. I’ve found inspiration in a powerful, four-word mantra that works on even the most non-motivated days, that answers the question “why” when I’d rather dig into...

Lemon Pepper Chicken with Lemon Pan Sauce

Unexpected guests? Need to impress on a weeknight? Try my Lemon Pepper Chicken – it’s light and crispy, with a peppery, creamy lemon sauce that transforms your table into an elegant French dining room in less than 30 minutes.  Do you remember the first time you tasted fresh cracked peppercorns? The complex floral and fruity qualities can be a pleasant surprise if you’re used to a shaker of dust-like, ancient pepper that’s been passed down from table to table for generations of futile attempts at seasoning. Peppercorns were actually used as currency in the middle ages, and there are...

Hummingbird Cake

Skip the boring banana bread and breathe new life into that overripe fruit with this tropical Hummingbird Cake recipe.  The Caribbean is calling, and this cake is the next best thing! “If you build it, they will come,” has worked exactly (at least) two times in history: once in a Kevin Costner movie and once for the tourism board of Jamaica. It may be hard for those of us who dream of Montego Bay beaches to imagine, but in the 1970s it wasn’t exactly a tourist hotspot. In an attempt to bring more flights and full wallets in from...

Oreo Cheesecake

The simple perfection of a classic Oreo cookie combines with the rich decadence of a cheesecake to make this show-stopping dessert. My Oreo Cookie Cheesecake is guaranteed to bring back fond childhood memories of milk and cookies even though you’re going to need a fork this time! Few snack foods fill me with nostalgia like Oreo cookies. I enjoyed them as a little girl and then later shared them with my own children. What’s not to love about that signature sweet “stuff” sandwiched between two crispy chocolate cookies? I’d argue that the act of eating them is even a...
