- 1 1/2 pounds Russet potatoes peeled and sliced into 1/4 inch thick rounds
- 2 cups Sharp cheddar shredded
- 2 tablespoons fresh parsley chopped
Instructions
- Preheat oven to 350°F. Spray a 2-quart (or an 11x17) baking dish with nonstick cooking spray; set aside.
- In a 12-inch skillet, brown sausage (1 pound) and cook until there is no longer any pink. Drain grease.
- In a mixing bowl, mix together soup (1 can), milk (3/4 cup), chopped onion (1/2 cup), salt (1/4 teaspoon), black pepper (1/4 teaspoon), dried thyme leaves (1/2 teaspoon), dried sage (1/4 teaspoon), and Worcestershire sauce (2 teaspoons) until evenly combined.

Good basic recipe. I sauteed onions, garlic, green pepper and shredded zucchini along with hot pepper flakes and hot sauce and then added to cream mixture. To the cream mixture I added sour cream as well for some tang and richness. I subbed poultry seasoning for sage and used celery salt instead of regular table salt. I also added some ground beef in with the sausage to provide more protein to the meal. Adding additional veggies would be great: peas, corn, broccoli, cauliflower, asparagus etc.
I want to make this for my husband on Father’s day. Is there a way to incorporate eggs into this dish?

This casserole is delicious!, easy to prepare & I have the ingredients in house to make. I buy Jimmy Dean sausage rolls at a local discount grocery store for $2.00 a package so also an economical meal. I do have to bake at least an extra 30 minutes to get my potatoes tender.
