This is the perfect crockpot chicken recipe: You dump all the ingredients into the crockpot and turn it on. Fix it and forget it!! I love meals like this. I put it all together before I go to work and assemble it when I’m home, and I have a house full of crazy hungry people.

What Is Mississippi Chicken?
It’s a tender, savory shredded chicken dish that is pure comfort food served over cooked rice or makes wonderfully hearty sandwiches. It’s a variation of the Mississippi pot roast recipe, which virally swept the country. A Mississippi home cook created it!
What Type Of Chicken Should I Use?
I make this with 3 large (about 7-8 ounces each) skinless chicken breasts. My family prefers white meat, so I stick with the breasts. If you prefer dark meat, chicken thighs work really well. Because the thighs are naturally higher in fat, cut the amount of butter in half.
Mississippi Chicken Recipe Ingredients
- Chicken Breast: I use 3–7-8 ounce boneless, skinless chicken breasts.
- Au Jus Gravy Mix: In a pinch, you can substitute a packet of brown gravy mix for the au jus mix.
- Ranch Seasoning:Ā This is the same as ranch dressing mix.
- Chicken Broth: Use low sodium!
- Unsalted Butter: This recipe is a bit salty, so don’t use regular butter.
- Pepperoncini Peppers: I like to use whole peppers rather than sliced.
- Garlic Powder: I often add one teaspoon of garlic powder.
Variations + Substitutes
- Weight Watchers Mississippi Chicken:Ā To make this WW-friendly, simply omit the butter from the recipe below and serve over cooked zoodles!
- Mississippi Chicken With Potatoes: The recipe below is delicious with potatoes! Add 3-4 medium russet potatoes, peeled and cubed, spread in a layer on the bottom of the crockpot before you add the chicken. Proceed with the instructions for the rest of the recipe.
- Mississippi Chicken With Cream Cheese: To create a creamy version of this recipe, omit the butter and add an 8-ounce block of cream cheese cut into cubes. Add to the crockpot after 5-6 hours, when the chicken has been shredded. Stir together and serve.
- Spicy It Up:Ā To kick this up a notch, to borrow a phrase, you can add sliced pepperoncini instead of the whole ones and some of the juice from their jar.

- Reheating: Did you know that the USDA says leftovers shouldĀ never be reheated in the slow cooker? Instead, opt for aĀ microwave, oven, or stove.
- How Long Can You Keep This In The Fridge? Leftovers should be stored in the refrigeratorĀ 2 hoursĀ after the serving time. They’ll lastĀ 3-4 days.
- Can You Freeze This?Ā Yes. In fact, this makes a great freezer meal. Store in an airtight container or Ziploc bag. The chicken will last for four months in the freezer.

Is Mississippi Chicken Low-Carb And Keto-Friendly? Yes, it absolutely is. You, of course, will need to serve it on a low-carbohydrate option like cauliflower rice, mashed cauliflower, or zoodles.
How Long Should You Cook Chicken In The Crockpot? Boneless, skinless chicken breasts should be cooked on low for 1 1/2 to 2 1/2 hours. I don’t cook this cut of chicken on high because it can dry out easily.
Do I Mix Ranch Dressing And Gravy Up? No. You do not prepare either of them according to the packages. Instead, you use them as simple ingredients, directly from the packets.
Is Mississippi Chicken Spicy? No, it’s really not. Because the recipe uses whole pepperoncini peppers rather than the sliced version, the spicy elements of the pepper (the ribs and seeds) are encapsulated, containing most of the heat.
How to Make Crock Pot Mississippi Chicken
- Lay chicken breast in a single layer in a crockpot.
- Evenly sprinkle a packet of au jus gravy mix andĀ ranch seasoning over chicken and pour chicken broth over them.
- Lay pepperoncini peppers over chicken.
- Top each chicken breast with 2 slices of butter. Cover and cook on low 5 to 6 hours, or until fork-tender.
- Remove chicken from crockpot and when cool enough to handle, shred with 2 forks. Serve.

How To Serve:
- This is delicious served over cooked rice, buttered egg noodles, mashed potatoes, garlic mashed potatoes, make-ahead mashed potatoes, or my favorite on sandwich rolls with extra pepperoncini and melted provolone cheese (my kids love this with cheese!). You can’t miss with any of these choices!
A Few Things To Serve With:
- When I serve these as a Mississippi chicken sandwich, there’s nothing I like better than having them with my KFC coleslaw, carrot salad, or grape salad with air fryer potato wedges! When I serve it over rice or noodles, I like to serve my southern-style green beans, green beans with bacon, cheesy broccoli cauliflower casserole or simple roasted broccoli on the side.
How To Make Mississippi Chicken In The Oven
- Place chicken breasts in a single layer in a buttered baking dish.
- Sprinkle the top of the chicken with ranch seasoning mix and au jus gravy mix.
- Top the chicken with pepperoncini peppers and butter.
- Cover with aluminum foil and bake in a 350°F oven until it reaches an internal temperature of 165º when measured with an instant-read thermometer

Mississippi Chicken
Ingredients
- 3 chicken breast skinless and boneless
- 1 packet au jus gravy mix
- 1 packet ranch seasoning mix
- 1/2 cup chicken broth
- 1 stick unsalted butter sliced into 8 pieces
- 6-8 pepperoncini peppers
Serve:
- cooked rice, prepared mashed potatoes, hoagie rolls and slices of provolone
Instructions
- Lay chicken breast (3) in a single layer in a crockpot.
- Evenly sprinkle a packet of au jus gravy mix (1) and ranch seasoning (1 packet) over chicken and pour chicken broth (1/2 cup) over them. Lay pepperoncini peppers (6-8) over chicken. Top each chicken breast with 2 slices of butter.
- Cover and cook on low 5 to 6 hours, or until fork-tender.
- Remove chicken from crockpot and when cool enough to handle, shred with 2 forks. Return shredded chicken to crockpot and toss to coat in the gravy.
- Serve on toasted hoagie rolls with provolone, over rice, or over mashed potatoes.

I donāt have a slow cooker, so if I were to throw everything in a Dutch oven, what temperature would you suggest I set the oven to and how long should I bake it?
Marianne, I haven’t made this recipe in the oven. I don’t think there is enough liquid in the recipe, as written, to braise properly in the oven. You will need to play with that. I’d preheat the oven to 275 to 300 degrees. I think it should take about 60 minutes. Let me know how it goes!! Best of luck š
