My chopped Italian sandwich recipe will leave your taste buds so happy that no other sub will do. This sandwich has the perfect combination of chopped cheeses, meats, peppers, and veggies, bathed in a zesty Italian dressing.
Chopping all the ingredients and piling them in a soft roll will give you the perfect bite of all the ingredients every time. These perfect subs are perfectly portable for lunch at work or a weekend picnic.

Chopped Italian Sandwich Ingredients
- Lettuce: Use your favorite lettuce – iceberg or romaine is suggested
- Deli Meats: Pepperoni, Salami, Mortadella, Capocollo, Soppressata, or any of your favorite deli meats will work. Of course, the combination of meats in the recipe is classically Italian and the perfect combination of zesty, meaty goodness. I like to buy Boar’s Head charcuterie trio. It has 3 of the meats I use in this recipe.
- Provolone cheese: this is an Italian semi-hard cheese made from cow’s milk.
- Tomato: the more ripe and fragrant the better. Feel free to use any variety that is in season.
- Pepperoncini peppers: I know some people don’t like peppers, but I encourage you to try them. This pepper gives the sandwich a great punch, but it’s not too spicy.
- Red onions: Classically Italian, red onions add zip and crunch.
- Olive oil: The perfect oil to carry the flavor of the vinegar and spices
- Red wine vinegar: Classic and wonderful
- Dried Italian seasoning: This spice rounds out the dressing and is a perfect mix of herbs
- Salt + Pepper: Sea salt and cracked black pepper
- Mayonnaise: You can use whatever brand you have on hand
- Hoagie or sub rolls: I used sub rolls, the fresher the better
Tips
- Size Matter: Use a large chopping board. When ready to chop the ingredients, use a large knife and make sure you thoroughly slice through the meats. You can flip over the ingredients and continue to chop until everything is evenly chopped. Once the dressing is added, flip again and chop.
- Change It Up: Feel free to add or substitute your favorite meats, cheeses, and veggies! Have fun!
- Keep It Fresh: Tightly wrap the finished sandwich in plastic and eat it a few hours later. The dressing will moisten the bread and all the ingredients will sing!
Storing + Freezing + Make-ahead
- How Long Can You Keep This in The Fridge? You can keep the chopped ingredients in the refrigerator for 1 day. Longer than this will result in soggy veggies.
- Can You Freeze This? I do not recommend freezing.
- Make-Ahead: In the tips, I suggest making the sandwich ahead. I recommend enjoying the sandwich within four hours.
How to Make Chopped Italian Sandwich
- Prepare the deli meats.
- On a chopping board, chop the lettuce.
- Add the deli meats on top.
- Add the veggies and cheese.
- Chop all the ingredients.
- Sprinkle with olive oil, vinegar, seasonings, and mayonnaise. Fold until evenly mixed.
- Load the chopped mixture to the split rolls.

Chopped Italian Sandwich
Ingredients
- 2 cups shredded lettuce
- 6 slices pepperoni
- 6 slices salami
- 6 slices mortadella
- 6 slices sweet capocollo
- 6 slices sweet Soppressata
- 6 slices provolone cheese
- 6 slices tomato
- 1/4 cup pepperoncini peppers
- 1/4 cup thinly sliced red onions
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon dried Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup mayonnaise
- 4 hoagie or sub rolls
Instructions
- On a very large cutting board spread lettuce (2 cups) in a single layer.
- On top of the lettuce, arrange a layer of pepperoni, salami, mortadella, sweet capocollo, and sweet Soppressata (6 slices each).
- On top of the meats, arrange a layer of provolone (6 slices), tomatoes 96 slices), pepperoncini peppers (1/4 cup), and red onion (1/4 cup). Chop all ingredients, folding the mixture over onto itself, a few times, with the long knife, until finely dice.
- When the mixture is finely diced, sprinkle with olive oil (3 tablespoons), red wine vinegar (3 tablespoons), Italian seasoning (1 tablespoon), salt (1/4 teaspoon), and black pepper (1/4 teaspoon). Place the mayonnaise (1/4 cup) in the center of the pile and fold over onto itself, until the mixture is evenly mixed and everything is well coated with the dressing.
- Split the rolls. Scoop out some of the bread to make a well, load with the chopped mixture, and serve.
