Before You Begin
✨ Use Regular Bacon: Skip thick-cut — it won’t crisp up as nicely or wrap tightly around the smokies. Regular bacon bakes to that perfect balance of chewy and crisp.
✨ Line Your Pan: Always line your baking sheet with foil (and a wire rack if you have one). It makes cleanup easier and helps the bacon cook evenly.
✨ Don’t Skip the Sugar Press: Rolling each wrapped smokie firmly in the brown sugar mixture gives you that irresistible caramelized glaze.
✨ Watch for Hot Sugar: When you pull these from the oven, the melted sugar will be molten! Let them cool for at least 5 minutes before serving.
✨ Adjust the Heat: Cayenne adds a subtle warmth, but you can increase or omit it depending on your crowd.
✨ Make-Ahead Tip: Assemble the smokies the day before, cover, and refrigerate. Just pop them in the oven before guests arrive for easy entertaining!
Ingredients for Bacon Wrapped Smokies
This is just a quick glance at what you’ll need. For exact measurements and the full ingredient list, head down to the recipe card below.
- Smoked Lil’ Smokies: Choose a classic pork or beef blend — either works great.
- Bacon: Regular (not thick-cut) bacon crisps up best and wraps snugly.
- Brown Sugar: The sweet coating caramelizes beautifully in the oven.
- Cayenne Powder: Adds subtle warmth and contrast to the rich, sweet bacon glaze.
⭐ Pro Tips
⭐ Toothpick Trick: Insert the toothpick through both ends of the bacon to help it stay wrapped tight while baking.
⭐ Crispier Bacon: Place a wire rack on your foil-lined sheet pan to let the fat drip away for extra crispiness.
⭐ Make-Ahead Friendly: Assemble the smokies up to a day in advance and refrigerate; bake just before serving.
⭐ Spice It Up: If you love heat, double the cayenne or sprinkle a little crushed red pepper over the top before baking.
⭐ Serving Tip: These are best slightly cooled — that caramelized glaze is molten right out of the oven!

✦ Frequently Asked Questions
✦ Can I make Bacon Wrapped Smokies ahead of time?
Yes! Assemble them the day before, store in the fridge, and bake right before serving. You can also bake them ahead and reheat at 325°F for 10–15 minutes.
✦ Can I cook these in an air fryer?
Absolutely! Air fry at 400°F for about 10–12 minutes, flipping halfway through, until the bacon is crisp and caramelized.
✦ Can I use turkey bacon?
You can — just note it won’t caramelize quite as much as pork bacon. Brush lightly with maple syrup before baking to enhance flavor and color.
✦ How do I keep them warm for a party?
Transfer to a slow cooker on the “warm” setting and line the bottom with parchment to prevent sticking.
