Neiman Marcus Chicken Casserole is pure comfort food—tender chicken, smoky bacon, sharp cheddar, green onions, and crunchy almonds folded into a rich, creamy sauce and topped with buttery Ritz crackers. It’s incredibly easy to put together, but that golden, bubbly topping makes it feel special enough for company or a potluck.
If creamy chicken casseroles are your thing, you’ll also love my Million Dollar Chicken Casserole, Poppy Seed Chicken, and Crack Chicken Casserole. And you can find even more cozy favorites in my Chicken Casserole Recipes collection.
What makes this one a little different is the combination of bacon, cheddar, green onions, slivered almonds, and a touch of hot sauce. It’s creamy and indulgent, but after testing it, I found there’s one thing you really need to watch—the salt. I’ll show you exactly how to keep all that rich flavor without letting the casserole become overly salty.
Storing + Reheating + Freezing
Storing: Cover leftovers tightly or transfer them to an airtight container and refrigerate for 3–4 days.
Reheating: Individual portions can be reheated in the microwave until hot. For the best cracker texture, reheat larger portions in the oven until warmed through.
Freezing: For the best results, freeze the chicken filling without the Ritz topping. Wrap the casserole tightly and freeze for up to 3 months. Thaw overnight in the refrigerator, then add freshly crushed Ritz mixed with melted butter before baking.
What to Serve With Neiman Marcus Chicken Casserole
This casserole is rich and creamy, so I like to serve it with something fresh or green to balance the meal.
- Vegetables: Southern Green Beans, Roasted Broccoli, Sautéed Asparagus, or simple roasted vegetables.
- Salads: A crisp House Salad, KFC Coleslaw, or a light vegetable salad is perfect alongside the creamy casserole.
- Bread: Add warm Quick Dinner Rolls or Bisquick Biscuits if you want a heartier comfort-food dinner.
For a potluck or holiday meal, I’d keep the sides simple and let the casserole be the star.
Frequently Asked Questions
◆ What is Neiman Marcus Chicken Casserole?
Neiman Marcus Chicken Casserole is a rich baked chicken casserole made with cooked chicken, cream of chicken soup, sour cream, cheddar cheese, bacon, green onions, slivered almonds, and a little hot sauce. It’s topped with buttery Ritz crackers and baked until hot, creamy, and golden.
◆ Why is it called Neiman Marcus Chicken Casserole?
The exact origin of the modern casserole isn’t well documented. The recipe is commonly associated with dishes inspired by Neiman Marcus cafés, and today the name generally refers to this creamy chicken casserole made with cheddar, bacon, almonds, and a buttery cracker topping.
◆ Can I use rotisserie chicken?
Absolutely. Rotisserie chicken makes this recipe especially quick and easy. Just keep in mind that some rotisserie chickens are heavily seasoned. If yours tastes salty, use no-salt-added cream of chicken soup, Ritz Hint of Salt crackers, or both.
◆ Can I leave out the almonds?
Yes. The casserole will still work without them. However, slivered almonds are characteristic of Neiman Marcus Chicken Casserole and add a subtle nutty flavor and nice texture, so I recommend keeping them whenever possible.
◆ Is Neiman Marcus Chicken Casserole spicy?
No. The small amount of hot sauce adds flavor and acidity rather than noticeable heat. If you’re especially sensitive to spice, you can reduce it slightly, but I wouldn’t omit it entirely unless necessary.

Neiman Marcus Chicken Casserole
Ingredients
Chicken Filling
- 4 cups cooked chicken chopped or shredded
- 1 (10.5-ounce) can condensed cream of chicken soup
- 1 cup sour cream
- 1 1/2 cups freshly shredded sharp cheddar cheese
- 6 slices bacon cooked crisp and crumbled
- 1/2 cup thinly sliced green onions divided
- 1/3 cup slivered almonds
- 1 1/2 teaspoons hot sauce such as Tabasco
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon freshly ground black pepper
Topping
- 1/2 cup freshly shredded sharp cheddar cheese
- 1 1/2 cups Ritz crackers, coarsely crushed
- 4 tablespoons unsalted butter melted
- 3 tablespoons slivered almonds
Instructions
- Prep the oven and pan. Preheat oven to 350°F (177ºC). Lightly grease a 9×13-inch baking dish.
- Make the filling. In a large bowl, combine the chicken (4 cups), cream of chicken soup (1 can), sour cream (1 cup), 1 1/2 cups cheddar, bacon (6 slices), about ⅓ cup of the green onions, ⅓ cup almonds, hot sauce (1 1/2 teaspoons), garlic powder (1/2 teaspoon), onion powder (1/2 teaspoon), and black pepper (1/2 teaspoon). Stir just until evenly combined.
- Assemble. Spread the chicken mixture evenly in the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar evenly over the filling.
- Make the topping. Combine the crushed Ritz crackers (1 1/2 cups) with the melted butter (4 tablespoons). Sprinkle evenly over the cheese, then scatter the remaining 3 tablespoons of slivered almonds over the crackers.
- Bake. Bake uncovered for 25–30 minutes, until the filling is bubbling around the edges and the topping and almonds are golden brown.
- Finish and serve. Let stand for 5–10 minutes, then sprinkle with the remaining green onions and serve hot.

Notes
- Don’t automatically add salt. Bacon, cheddar, condensed soup, and Ritz crackers already bring plenty of sodium to the casserole. Taste your ingredients first, especially if you’re using rotisserie chicken.
- Homemade chicken gives you the most control. Plain cooked chicken keeps the casserole flavorful without pushing it into overly salty territory.
- Use unsalted butter. There’s already plenty of seasoning in the other ingredients, so salted butter isn’t necessary.
- Shred your own cheddar. Freshly shredded cheese melts more smoothly and gives the filling a creamier texture.
- Don’t pulverize the crackers. Rough crumbs and a few larger pieces create a much better crunchy topping than cracker dust.
- Don’t overbake. Everything in the filling is already cooked. Bake only until the casserole is thoroughly heated, bubbling around the edges, and golden on top.
