- 1 (32-ounce) package tater tots
- 12 large eggs
- 1/2 cup milk
- 1/4 cup green onions thinly sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup Monterey jack cheese, shredded
- 2 cups cheddar cheese, shredded, divided
- 2 tablespoons green onions, thinly sliced
Instructions
- Prep the oven + pan: Preheat oven to 350ºF (177ºC). Spray a 9×13-inch baking dish with nonstick cooking spray.
- Cook the sausage: In a large skillet, cook 2 (9-oz) packages breakfast sausage links until cooked through. Transfer to a paper towel–lined plate, drain off any grease, then slice into ½-inch pieces.
- Cook the bacon: In the same skillet, cook 1 pound bacon until browned and crispy. Drain on paper towels and crumble.
- Layer the tater tots: Arrange the frozen 32-ounce package of tater tots in a single, even layer in the prepared baking dish

- Mix the eggs: In a large bowl, whisk together 12 eggs, ½ cup milk, ¼ cup sliced green onions, ½ tsp salt, and ¼ tsp black pepper.
- Add the meats: Stir in the cooked sausage and half of the crumbled bacon.

- Cheese layer #1 (in the eggs): Fold in 1 cup Monterey Jack and 1 cup cheddar (this is the first cheese layer).
- Assemble: Pour the egg mixture evenly over the tater tots.
- Bake: Bake 40–45 minutes, until the eggs are set in the center.
- Cheese layer #2 (on top): Sprinkle the remaining 1 cup cheddar evenly over the top. Return to the oven for 5–7 minutes, just until the cheese melts.
- Rest + finish: Let stand 10 minutes. Sprinkle with the remaining bacon and 2 Tbsp sliced green onions, then slice and serve.

Hi, Jeanne. Yes, you can. You can whip it up the day before you need it and slide it into the fridge, unbaked overnight, then bake it the next day. Just be sure to keep it covered and separate from other foods because of the raw egg content. It can be stored this way for up to 48 hours, but I find it best to bake it within 24 hours of assembly.
If you want to make this entirely ahead, just slow thaw overnight in the fridge before reheating.

I didn’t follow it exactly. I used a pie dish, hash browns, eggs, salt and pepper, milk, and cheese. So basically I made a quiche at 350 for 45 mins and it turned out great! Super easy to make and clean up! I’m about to have a baby so making easy recipes like this is going to become my go to. My husband and two step sons eat a ton!

I make this with loose ground sausage instead, my family loves it! I often make it, (and a big pasta salad with lots of veggies) to take along when we rent a house at the beach. Leftovers heat up nicely in the toaster oven, so people can help themselves to a “slice” of the casserole or some pasta salad as they come and go throughout the day … while I read a book in my sand chair 😉
