These are THE brownies of my childhood! Chocolate on chocolate with an insanely fudgy consistency. They always make me picture sweet fudgy cosmic brownies. The texture is everything in a brownie and these are soft, chewy, and fudgy.
These babies are seriously sweet and the little rainbow sprinkles are just the icing on the cake – literally! I love making brownies and sharing them just spreads the joy. They’re perfect for virtually every occasion. Picnics, potlucks, church suppers, family dinners, you name it!

Cosmic Brownies Recipe Notes
Cocoa: I use unsweetened cocoa in these brownies so I can add the sugar I want and control the sweet factor.
Candy Topping: This is the Rainbow Chip Crunch I use. If you’re interested in using a different topping, I would recommend trying mini M&Ms. The only reason that I don’t use mini M&Ms as my normal topping is that the color tends to fade.
After you let the brownies sit in the fridge, or if you freeze them, the color of the M&Ms just isn’t as bright – it’s a little bit funky and dull. The Rainbow Chips, however, keep their color.
In a pinch, you could substitute sprinkles (preferably the bright, round sprinkles) for candies. They will not provide the same texture as the Rainbow Chips and mini M&Ms, but they still give off that fun splash of color and slightly candied taste.
If you’re in an experimental mood, you could go totally rogue and try something different altogether. Chopped nuts (like on Little Debbie’s Fudge Brownies), chocolate chips, or chocolate shavings all make yummy toppings for cosmic brownies recipe.
Storing Tips
Storing is best done in the fridge in a resealable bag. I like to wrap mine individually before tossing them in that gallon-sized Ziploc, but it isn’t absolutely necessary. It makes them easier to grab and toss into lunches and it often keeps me from eating multiples at one time (I can’t help myself).
How Long Can You Keep This In The Fridge?
This cosmic brownies recipe will be good in the fridge for up to a week if they’re well protected from air.
Can You Freeze Cosmic Brownies Recipe?
Yes, you sure can. You can wrap this cosmic brownies recipe individually or wrap the entire batch before you cut them. I like to cover them in wax paper to keep the ganache in place.
It seems to work best if you wrap them in plastic wrap before placing them into a freezer bag. Squeeze the air out of the bag to keep them moist. Brownies can be kept in the freezer for 4-6 months.
Make Ahead Tips
There isn’t a ton of prep involved since these tasty little cosmic brownies recipe only take a few minutes to throw together. However, you can pre-measure and store the dry ingredients together so they’re ready to go. I like to make a couple of batches and go the freezer route.

Cosmic Brownies
Ingredients
Brownies:
- 1 1/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1 tablespoon cornstarch
- pinch salt
- 1 1/2 sticks butter melt
- 2/3 cup brown sugar packed
- 1 cup sugar
- 3 tablespoons whole milk
- 2 teaspoon vanilla extract
- 2 large eggs
Chocolate Ganache
- 1 1/2 cups semisweet chocolate chips
- 1/2 cup heavy cream
Garnish:
- Wilton Rainbow Chip Crunch
Instructions
- Preheat oven to 350 degrees. Spray a 9 X13 inch baking dish with nonstick baking spray.
- In a small mixing bowl, whisk together flour, cocoa, baking powder, cornstarch, and salt and set aside.
- In a medium mixing bowl, using a handheld electric mixer beat butter, and both sugars until well combined. Add milk and vanilla and beat until combined. Add eggs one at a time, beating until just incorporated. Gradually add the dry ingredients and mix just until combined. Pour batter into the prepared baking dish and bake in preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Cool pan on a baking rack.
- Meanwhile, prepare the chocolate ganache. Place chocolate chips and the heavy cream in a microwave-safe bowl. Microwave on high for 1 minute. Whisk together until the mixture is completely smooth.
- Pour Ganache over slightly cooled brownies.
