MELT IN YOUR MOUTH CHICKEN INGREDIENTS
- Butter or nonstick spray
- Boneless chicken breasts: Thinly slice chicken breast; or use chicken tenders.
- Salt+Black pepper: Table salt and fresh cracked black pepper. You can also skip the salt and use 1/2 teaspoon seasoning salt.
- Mayonnaise: A magical ingredient which seals in moisture and absorbs all the yummy flavors. You can substitute plain Greek yogurt or sour cream instead of the mayo.
- Parmesan cheese: Grated parmesan adds a nutty saltiness to the chicken.
- Garlic powder: A pantry stable, so it is easy to add the pungent flavor of garlic.
- Onion powder: Another pantry staple, this adds savory flavor.
- Italian seasoning: This mixed seasoning has all those good Italian herbs.
TIPS + VARIATIONS
- Don’t overcook the chicken!! For a moist chicken breast, cook until the temperature just reaches 165ºF (74ºC). Boneless skinless chicken breasts can dry out easily when overcooked.
- Too Brown: If your chicken is browning too quickly, loosely cover with aluminum foil.
- Paprika: Some versions of this recipe add a little paprika to the mayo mixture. It adds a nice flavor especially if you use smoked.
- Switch Up The Cheese: Try asiago or romano in place of the parm.
- Can I Use Chicken Thighs: Absolutely! You’ll need to extend the cooking time by a few min.
STORING + FREEZING + MAKE-AHEAD
- How Long Can You Keep This in The Refrigerator? Once cooked and cooled, your melt in your mouth baked chicken will last up to three days in the fridge. Store in an airtight container.
- Can You Freeze This? The best way to freeze this dish is to fully cook it first, wrap it tightly in plastic then put it in a freezer bag. Thaw and reheat.
- Make-Ahead: You can mix the mayo/parmesan mixture and spices ahead of time and slice the chicken breasts. 20 minutes in the oven and you have a freshly based dish. Alternatively, once the dish baked simply warm up in the microwave oven on half power. I suggest serving a freshly baked dish for the best results.

HOW TO MAKE MELT IN YOUR MOUTH CHICKEN RECIPE
- Slice the chicken breast halves in half (wow that’s a mouthful!)lengthwise.
- Arrange it in the baking pan. Season both sides with salt and pepper.
- In a small bowl, add the mayonnaise, Parmesan cheese, black pepper, garlic and onion powder, and Italian seasoning.
- Mix.
- Spread the mayo mixture over top of the chicken breasts.
- Bake until beautifully golden brown and a meat thermometer reaches an internal temperature of 165°F (74ºC)/
- Serve.

Melt In Your Mouth Chicken
Ingredients
- butter or nonstick spray
- 3 (6-8 ounce) each boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1 teaspoon black pepper, DIVIDED
- 1 cup mayonnaise
- 1 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning
Instructions
- Preheat oven to 375ºF (190ºC) baking dish.s. Lightly butter a 9X13 inch, or spray with nonstick cooking spray.
- Lay a chicken chicken breast (3) on a clean cutting board. Hold the top of the chicken breast with one hand. Using a sharp knife, very carefully slice the chicken breast in half lengthwise then arrange in a single layer in the prepared baking dish. Continue with the remaining pieces. Season both sides with a total of 1/2 teaspoon salt and 1/2 teaspoon of black pepper.
- In a medium mixing bowl, whisk together mayonnaise (1 cup), Parmesan cheese (1 cup), remaining black pepper (1/2 teaspoon), onion powder (1/2 teaspoon), garlic powder (1/2 teaspoon), and Italian seasoning (1 teaspoon).
- Spread an even amount of mayo mixture over each chicken breast.
- Bake in the preheated oven until chicken reaches an internal temperature of 165°F (74ºC), about 20-22 minutes. Remove from oven and sprinkle with parsley.
